Spaghetti with Mozzarella-Stuffed Meatballs

MAKES TWENTY MEATBALLS

Ingredients
1/4 cup plain bread crumbs
1/2 cup milk or water
1 tablespoon extra-virgin olive oil
3 garlic cloves, 2 smashed and 1 chopped
Two 28-ounce cans crushed tomatoes
Salt
1 pound lean ground sirloin
2 tablespoons chopped flat-leaf parsley
1/2 cup freshly grated Parmigiano-Reggiano cheese, plus more for serving
1 large egg
4 ounces mozzarella cheese, cut into 20 (1/2-inch) cubes
1 pound spaghetti
1. In a medium bowl, soak the bread crumbs in the milk.
2. In a large, wide saucepan, heat the olive oil over medium heat. Add the smashed garlic and cook until golden, about 2 minutes. Add the tomatoes, season to taste with salt and let the sauce simmer over low heat, stirring occasionally.
3. Add the beef, chopped garlic, parsley, Parmigiano-Reggiano, egg and 1 teaspoon of salt to the soaked bread crumbs and stir with a fork until combined. Place about 2 tablespoons of the mixture in your hand and press a mozzarella cube into the center. Shape the meat around the cheese, forming a ball. Repeat with the remaining meat and mozzarella.
4. Stir the sauce and raise the heat to medium- low. Carefully place the meatballs in the sauce, submerging them completely. Bring the sauce to a simmer and cook without stirring for 20 minutes.
5. Meanwhile, bring a large pot of salted water to a boil. Add the spaghetti, cook until al dente, about 8 minutes, and drain. Toss the spaghetti with the tomato sauce and meatballs, sprinkle with Parmigiano-Reggiano and serve.What is a really good meatball recipe that goes great w/ spaghetti?
For polpettes which I have on the menu at work I don't really have measurements but taste the results and amend if necessary. I use good minced beef with a generous helping of onion, couple of cloves of garlic, some chilly, eggs to bind, breadcrumbs, not too much, grated parmesan. a good amount and what is a good extra is too put some fennel seeds in when you mix it all together which I do in a food processor, then salt and pepper to taste. Make a sample meatball and cook it to see if you need to add anything. Then fry them off and add to a good tomato sauce and toss with spaghetti. Tasty Baked Meatballs --
.INGREDIENTS
3 pounds ground beef
1 1/2 cups Italian-seasoned dry bread crumbs
1 (10.5 ounce) can cream of mushroom soup
3 eggs, lightly beaten
1/4 cup grated Parmesan cheese
1 (1 ounce) package dry onion soup mix
..DIRECTIONS
1.Preheat an oven to 350 degrees F (175 degrees C). Line two baking sheets with aluminum foil and lightly grease.
2.Mix together the ground beef, bread crumbs, cream of mushroom soup, eggs, Parmesan cheese, and onion soup mix. Shape the mixture into balls about the size of a golf ball. Arrange on the prepared baking sheets.
3.Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Italian Spaghetti Sauce with Meatballs -
.INGREDIENTS
MEATBALLS
1 pound lean ground beef
1 cup fresh bread crumbs
1 tablespoon dried parsley
1 tablespoon grated Parmesan cheese
1/4 teaspoon ground black pepper
1/8 teaspoon garlic powder
1 egg, beaten
SAUCE
3/4 cup chopped onion
5 cloves garlic, minced
1/4 cup olive oil
2 (28 ounce) cans whole peeled tomatoes
2 teaspoons salt
1 teaspoon white sugar
1 bay leaf
1 (6 ounce) can tomato paste
3/4 teaspoon dried basil
1/2 teaspoon ground black pepper
..DIRECTIONS
1.In a large bowl, combine ground beef, bread crumbs, parsley, Parmesan, 1/4 teaspoon black pepper, garlic powder and beaten egg. Mix well and form into 12 balls. Store, covered, in refrigerator until needed.
2.In a large saucepan over medium heat, saute onion and garlic in olive oil until onion is translucent. Stir in tomatoes, salt, sugar and bay leaf. Cover, reduce heat to low, and simmer 90 minutes. Stir in tomato paste, basil, 1/2 teaspoon pepper and meatballs and simmer 30 minutes more. Serve.

Fast and Friendly Meatballs --
.INGREDIENTS
2 tablespoons olive oil
1 (20 ounce) package ground turkey
1 egg, beaten
1/3 cup Italian seasoned bread crumbs
..DIRECTIONS
1.Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish with the olive oil, and place it in the oven while preheating.
2.In a medium bowl, mix together the ground turkey, egg, and bread crumbs using your hands. Using an ice cream scoop if possible, form the meat into golf ball sized meatballs. Place about 1 inch apart in the hot baking dish. Press down to flatten the bottom just slightly.
3.Bake for 15 minutes in the preheated oven, then turn them over, and continue baking for about 5 more minutes, or until somewhat crispy on the outside. Serve with pasta and sauce or however you'd like.
I don't eat beef so I always use ground turkey . Try it much healthier .
Turkey Meatballs
1 lb. ground turkey
1/3 c. onion , chopped
1/2 c. bread crumbs
1 tsp. poultry seasoning
1/2 tsp. garlic powder ( 3 cloves fresh crushed )

1 egg
1 tsp. worcestershire
Mix all ingredients together and form into balls . I like to grill them , but you can fry , bake or broil if you wish . Finnish them off by placing in sauce . Ladle over your pasta .
I fully agree with Louise . Do your browning with any of the usual methods , but always finish meat balls in the sauce .
My meatball recipe is (more or less) this: Hamburger, pork sausage (about half the amount of hamburger), finely chopped onions (to taste... I like a LOT of onions) and if you like... a bit of finely chopped green pepper and garlic salt. I tend to go easy on the green pepper as they have a strong flavor. If you want meatballs that you're NOT going to put in sauce I like to add a little rice to them. :)
To a bowl add:
1 pkg Hamburger meat (about 1 pound)
Sausage meat (removed from casings) from 2 sausages
Seasoned bread crumbs
Finely chopped onion and garlic
Oregano
Splash of milk (about 1/4 cup)
Combine well and shape into balls. Fry so that they're toasty on all sides, and then finish cooking in the tomato sauce

all of these recipes are good, a old Italian woman taught me to add my meatballs to the sauce to cook, Slowly, so the taste of the sauce can go through the meatball.
