I need a great meatball recipe?

Maria's Italian Meatballs





This is my Italian mother's recipe for meatballs. Everyone always loves them and you can adjust the seasonings to taste.





INGREDIENTS:


1 lb lean ground beef


1/2 cup Italian bread crumbs


1/3 cup water (more or less)


1/4 cup grated Parmesan cheese


1 medium onion


garlic


salt


pepper





PREPARATION:


Mix all ingredients together. Don't add all of the water at one time. Mixture should be moist but not so that the meatballs fall apart.


Shape meatballs to desired size and place on a broiler pan (I wet my hands before shaping each meatball and it helps make a nice meatball.) Broil until outside is slightly brown on one side and then turn and broil the other side.





When finished, add to spaghetti sauce and simmer at least 20 minutes.I need a great meatball recipe?

1 lb ground chuck


1 cup parmesan cheese


1 egg


1 tsp garlic powder


1 tbsp salt


1 tsp pepper





Mix everything together, roll the meatballs, fry in pan till browned on each side, then finish in the oven. Makes for a very tender meatball. The recipe is easy to follow as well. ;)

INGREDIENTS





* 1 pound ground beef


* 1/2 pound ground veal


* 1/2 pound ground pork


* 2 cloves garlic, minced


* 2 eggs


* 1 cup freshly grated Romano cheese


* 1 1/2 tablespoons chopped Italian flat leaf parsley


* salt and ground black pepper to taste


* 2 cups stale Italian bread, crumbled


* 1 1/2 cups lukewarm water


* 1 cup olive oil





DIRECTIONS





1. Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.


2. Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold it's shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.


3. Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)


4. Place cooked meatballs into Marinara Sauce and cook for 15 more minutes.

Meatballs:

25-30 Meatballs





1 lb ground beef


3/4 cup breadcrumbs


4 teaspoons minced sweet onions


1 teaspoon crushed oregano leaves


1 teaspoon ground black pepper


1 teaspoon parsley


1 teaspoon garlic salt


1 egg





1. In a large bowl beat the egg.


2. Add the remaining ingredients and blend together with your hands.


3. Roll the mixture into 1 1/2'; balls with your hands and place on non-stick cookie sheet so that they are not touching.


4. Cook in pre-heated oven for 10 minutes at 450 degrees.


5. Turn meatballs over half way through cooking.


6. The meatballs will not be fully cooked at this point.


7. Add to your favorite sauce and simmer for 1 hour.


8. Serve over pasta.
Here's mine:


1lb of 75% or 80% lean ground beef


1-2 cloves of garlic minced fine (I grate mine on a small grater)


1/2 cup breadcrumbs - I use seasoned


2 tablespoons grated Parmignano-Reggiano cheese (can use Romano)


2 tablespoons parsley (fresh is better, dried is okay)


1 egg, beaten


Salt and pepper to taste





Mix throughly - I mix the garlic into the egg separately to make sure it's evenly distributed. Shape into balls - you can get up to 12, depending on the size.





You can pan fry them to brown in a little Extra-Virgin Olive Oil, but I'm too lazy to do that, so I bake them (sprayed with a little EVOO) at 425 degrees for 5 minutes, and lower the heat to 400 degrees for another 7 minutes. Cook 'em in your favorite sauce.
One half pound each of ground beef and ground pork. Or just use one pound of ground beef. Place in large bowl.





Add 1 cup of breadcrumbs, 1 cup grated Parmesan cheese (get the imported kind), 1 egg, salt, pepper, parsley flakes (if you have them), dash of garlic powder.





Mix well with your hands just enough to combine the ingredients. Do not overmix or the meat will get tough.





Using wet hands, form the mixture into 1 inch balls. Keep rewetting your hands every so often. (Makes handling easier.)





Cook in your favorite tomato sauce. Serve over pasta.





(You can also bake these in a greased baking pan, 350 degree oven for half an hour or so.)

Italian Meatballs - serves up to four





400g lamb mince


30g fresh breadcrumbs


1 small onion, chopped finely


1 clove of garlic, chopped finely - I chop the garlic and onion together in the food processor


锟?teaspoon red chilli flakes


1 teaspoon dried oregano


1 teaspoon dried basil


a good grating of parmesan (I'd say approx 15g) - optional


1 medium egg, beaten


olive oil as needed





300ml good quality tomato juice (I like Libby's)


400g tin chopped tomatoes


1 beef stock cube


small handful fresh basil


salt and pepper
These also freeze well


INGREDIENTS:


1 pound lean ground beef


1/3 cup finely chopped water chestnuts


2 tablespoons grated onion


1/2 teaspoon salt


1 tablespoon prepared horseradish


2/3 cup orange marmalade


1/8 teaspoon garlic powder


1 1/2 tablespoons flour


2 tablespoons soy sauce


1 tablespoon lemon juice


1 cup ketchup


1/2 teaspoon ground ginger


2 tablespoons packed brown sugar


3 tablespoons water


PREPARATION:


Combine lean ground beef, water chestnuts, salt and horseradish. Form into 3/4 to 1-inch balls and place in 1 1/2-quart baking dish. Combine remaining ingredients together. Pour over meatballs. Bake 30 to 40 minutes at 350掳.
I'm sure you are probably asking for meatballs to go in a sauce but you have to try these. A friend of mine made these for a Luau Theme Party. These were absolutely delicious. I couldnt stop eating them. lol





Waikiki Meatballs


1 1/2 lbs. ground beef


2/3 cup cracker crumbs


1/3 cup minced onion


1 egg


1 1/2 tsp. salt


1/4 tsp. ginger


1/4 cup milk


1 tbsp. shortening


2 tbsp. cornstarch


1/2 cup brown sugar, packed


1 can (13 1/2oz) pineapple tidbits, drained-reserve syrup


1/3 cup vinegar


1 tbsp soy sauce


1/3 cup chopped green pepper


Mix thoroughly beef, crumbs, onion, egg, salt, ginger, %26amp; milk. Shape mixture by rounded tablespoonfuls into balls.*Melt shortening in large skillet; brown and cook meatballs, remove balls; keep warm. Pour fat from skillet. Mix cornstarch and sugar. Stir in reserved pineapple syrup, vinegar and soy sauce until smooth. Pour into skillet cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Add balls, pineapple and green pepper.


Note: I cook my meatballs on a cookie sheet for about a half hour. I then put them in a crockpot and pour the pineapple syrup mixture over the meatballs. Add the green pepper. Cook on low.
