Take your burger - add some re hydrated minced onion (or finely diced minced fresh onion), some cracker crumbs, a bit of garlic powder, a touch of Italian seasoning. mix well then grab a big pinch of the meat and roll the meatballs between your palms until you have a ball about the size of a ping pong ball. Place in a cold skillet and then fry, turning occasionally until brown (or bake if you prefer)
2 pd hambuger

salt %26amp; pepper

italian bread crumbs

onion small

oregano 1 t olive oil

1/4 c parma graded cheese

mix all up shape intp meat balls

1 t basil

2 eggs
1 lb hamburger

large bunch of parsley, chopped

1 cup Parmesan cheese, shredded

1/2 cup Romano cheese, shredded

1 large egg

sea salt

cracked pepper

Combine all ingredients in a bowl. Shape into small meatballs and place in an ovenproof dish. Pour a large can of good quality tomato soup over the top.

Cover and cook in a 350F oven for 30 mins. Remove, cover and cook for a further 5/10 mins.

Serve with a fresh green salad and crusty bread.
The way I make my meatballs is I mix the burger meat with garlic powder, onion powder, oregano, salt, and pepper. I then make the meatballs and boil them until they are no longer pink in the middle. I then drain the water and hamburger fat. Then I add the sauce to the meatballs and let it simmer or even just kept piping hot for at least 2 hours. It makes the meatballs nice and tender and won't burn the sauce.
You didn't specify, so here's both...

Cocktail Meatballs

2 pounds ground beef

10 ounces grape jelly

1/4 cup chili sauce

2 tablespoons prepared mustard

Preheat oven to 350 degrees F (175 degrees C). Line a large roasting pan with aluminum foil.

Shape ground beef into golf-size balls. Place on prepared roasting pan for 20 to 25 minutes until done.

Meanwhile heat the jelly, chili sauce and mustard together in a 2 quart Dutch oven. Drain and add meatballs to the Dutch oven. Cover and simmer on low for 1/2 hour. Serve hot in chaffing dish with toothpicks.

Meatball Sub ( I use these in my spaghetti too!)

1 pound ground beef

3/4 cup bread crumbs

2 teaspoons dried Italian seasoning

2 cloves garlic, minced

2 tablespoons chopped fresh parsley

2 tablespoons grated Parmesan cheese

1 egg, beaten

1 French baguette

1 tablespoon extra-virgin olive oil

1/2 teaspoon garlic powder

1 pinch salt, or to taste

1 (14 ounce) jar spaghetti sauce

4 slices provolone cheese

Preheat the oven to 350 degrees F (175 degrees C).

In a medium bowl, gently mix by hand the ground beef, bread crumbs, Italian seasoning, garlic, parsley, Parmesan cheese, and egg. Shape into 12 meatballs, and place in a baking dish.

Bake for 15 to 20 minutes in the preheated oven, or until cooked through. Meanwhile, cut the baguette in half lengthwise, and remove some of the bread from the inside to make a well for the meatballs. Brush with olive oil, and season with garlic powder and salt. Slip the baguette into the oven during the last 5 minutes of the meatball's time, or until lightly toasted.

While the bread toasts, warm the spaghetti sauce in a saucepan over medium heat. When the meatballs are done, use a slotted spoon to transfer them to the sauce. Spoon onto the baguette and top with slices of provolone cheese. Return to the oven for 2 to 3 minutes to melt the cheese. Cool slightly, cut into servings, and enjoy!
