I need a meatball recipe that's simple but awesome! I really dont want to go out n buy anything...I have ground meat...basic spices, grated cheese, half an onion, fresh garlic, spaghetti sauce...and maybe some other really simple items?

* 1 lb. lean ground beef
* 1 egg
* 2 Tbsp. water
* 1/2 cup bread crumbs
* 1/4 cup minced onion
* 1/2 tsp. salt
* 1/8 tsp. pepper
Preparation:
Preheat oven to 350 degrees. In large bowl combine egg, water, bread crumbs, onion, salt and pepper and combine. Add ground beef, broken into chunks, and mush with your hands to combine. Form into meatballs about 1'; in diameter and place on a broiler pan. Bake at 350 degrees for 25-30 minutes until meatballs are no longer pink in center. Cool and freeze, or use in your favorite meatball recipe. Simple but yummy meatball recipe?
Meatballs in rich tomato sauce
This recipe for spaghetti with meatballs is kind to the budget so you can afford to make lots and freeze some for later.
Ingredients (serves 4)
鈥?500g veal mince
鈥?500g pork mince
鈥?1 onion, grated
鈥?1 lemon, rind finely grated, juiced
鈥?1 cup fresh white breadcrumbs
鈥?1/3 cup basil leaves, finely chopped
鈥?2 x 400g cans diced Italian tomatoes
鈥?1 cup chicken stock
鈥?cooked pasta and extra basil, to serve
Method
1. Combine veal and pork mince, onion, lemon rind, 1 tablespoon lemon juice, breadcrumbs, basil and salt and pepper in a large bowl. Roll tablespoonfuls of mince mixture into balls. Place meatballs on a tray lined with baking paper. Cover and refrigerate for 15 minutes or until firm.
2. Combine tomatoes and stock in a deep frying pan. Bring slowly to the boil over medium heat. Drop meatballs into tomato mixture. Reduce heat to low and simmer, uncovered, for 25 to 30 minutes or until meatballs are cooked through.
3. Place pasta in bowls. Spoon over meatballs. Top with extra basil and serve.

鈥?To freeze: Spoon cooled pasta and meatballs into single-serve airtight containers. Freeze for up to 8 weeks.
鈥?To reheat: Thaw in the fridge overnight. Microwave, covered, on MEDIUM (50%) for 4 to 6 minutes, stirring every few minutes, or until hot.
I just made these today, to go with my homemade spaghetti sauce. Recipe follows:
1/2 lb ground round
1/2 lb ground pork
1 egg
a splash of milk
chopped onion
3/4 cup seasoned bread crumbs
chopped garlic.
Mix it all in a bowl and squish it up with your hands just until its all incorporated. Don't over mix. Form 1 inch balls and bake on a rack so the grease drips down. Oven 350, about 25 minutes. (When I put them in the sauce I cook them only 15 minutes and they cook the rest of the way in the sauce.)
Another variation is to put them in a cupcake pan and make a thumb print on top and fill it with cheese, or thinly sliced veggies like peppers or mushrooms.
Also, you could use a splash of red wine instead of the milk. Good luck.
When I make meatballs, I use about a half pound of ground beef, an egg, crumble up about 8-10 Ritz crackers, and some salt and pepper. I mix all of this together then form it into balls which I fry in just a little bit of olive oil until they are just brown. Adding in some garlic or onion sounds like it would be really good.
buy a bag of frozen premade fully cooked meatballs. Open the bag, pour them in a crock pot, pour a full jar of barbecue sauce over them. Turn on high for about 4 hours. Yummmy.
