Sweedish meatball sauce recipe?

Hi, I need some help. I'm cooking sweedish meatballs tonight. I bought one of those bags of fully cooked frozen meatballs but it didn't come with sauce. Does anyone know an easy sweedish meatball sauce recipe with sour cream? I have sour cream. How can I make an easy sauce with that? Thanks!Sweedish meatball sauce recipe?
I actually defrost the meatballs first. Then I sautee them until they are warm. Then I add 1 container of sour cream and a can of cream of mushroom soup with half a can of milk. Let this simmer about 10 minutes. If you want to get fancier (like if you're going to serve them over noodles with parsley) add a few diced onions and fresh mushrooms.Sweedish meatball sauce recipe?
Try something simple like this:


Take 2 tbs. butter and melt in small saucepan. Add 2 tbs. flour, and cook for 1 minute. Add 1 can beef consomme and 1/4 tsp. of nutmeg. Bring to boil, and stir in 1/2 cup of sour cream. (Traditionally, you should use heavy cream, but I think sour cream would work too).
go to the store and get a bottle of that heinz sauce for meatballs. You heat the sauce in a sauce pan and add a little grape jelly. Let them meat balls cook for a while and then cover with sauce and let cook some more! My mom always make these, far as sourcream I don't think that would be too good with swedih meatballs!
Sauce:


2 cans Cream of Mushroom soup


1 cup sour cream


1 teaspoon Worcestershire sauce


1 dash Tabasco sauce


1/4 cup milk








Mix all ingredients well add meatballs, simmer until watm..voila! yummy easy fast swedish meatballs!!

Most every one is describing a basic White Sauce with a few spices.. found in every cookbook..


But I have not seen any one mention adding cooked rice to the meat,,, My mom claimed they were the snow balls and made it fun to eat.. I know now,, it was a filler to stretch the meat ( late 1940 - 50's and had a $400/ month budget for family of 5)

Here's a great sour cream sauce:





2/3 cup sour cream


2 tablespoons water


4 teaspoons fresh lemon juice


1/4 teaspoon salt


1/2 cup finely chopped fresh chives


Freshly ground black pepper





Blend sour cream, water, juice, salt, and chives in a blender until mixture just turns pale green. Season with pepper.





Then heat it up in a saucepan until simmering then dump in meatballs and let them sit in there until your ready to serve.


*Note: Let them heat up in the sauce for about 10 minutes if there still frozen, if thawed then just 5 minutes.

1/4 cup all-purpose flour


3 cups beef broth


1/4 cup heavy cream
Put sour cream in oven. Bake at 400 for 10 minutes. Voi la!
SWEDISH MEATBALLS IN CREAM SAUCE





1 lb. ground beef


1 c. bread crumbs


1/3 c. milk, canned okay


1/4 c. minced onion


Butter


1 tbsp. green pepper


1 1/2 tsp. salt


1/8 tsp. pepper


1/4 tsp. nutmeg





Mix all ingredients together and form into miniature balls. Saute meatballs in butter until brown. Remove balls from pan. Drain off grease. To pan that the balls had been sauteed in and add: 1 c. hot water 1 tsp. beef bouillon 1 c. milk, canned may be used


Cook and stir until thicken. Add meatballs and cover. Simmer for 15 minutes. Nutmeg may be sprinkled on the top. Serve in chafing dish, kept warm.

I want to make meatballs today, but do not necessarily want spaghetti. What other recipes do you know of that use meatbals?Besides spaghetti and meatballs, and appetizer meatballs,what other recipes are there?
two different ways I make meatballs:


with eggs and breadcrumbs or crackers, fry and either make milk gravy (put flour in pan to soak up oil, add spices and milk) or add cream of mushroom soup and milk. Then simmer meatballs, serve over noodles or rice.


Or:


mix rice, eggs and spices, put in a pot of boiling stew veggies (beef base, chopped tomatoes, onions, carrots, green beans, corn, peas, whatever you like) You don't have to fry meatballs first, just make sure your stew is nice and hot before you drop the balls in, and when the veggies are done, the meatballs are too. This is called abondigas in spanish or if you just use a tomato sauce base w/o veggies, I have heard it called porcipine meatballs in english.Besides spaghetti and meatballs, and appetizer meatballs,what other recipes are there?

For the meatballs:


6 cups olive oil or vegetable oil, for frying


1 medium-sized head cauliflower (about 1 pound)


1 1/2 pounds ground beef, lamb, or veal


1 small onion, finely chopped


1/2 teaspoon ground cinnamon


1/2 cup chopped fresh parsley leaves


1 1/2 teaspoons tabil (a Tunisian spice blend of coriander seed, caraway seed, garlic powder, cayenne pepper)


1 teaspoon salt


1/2 teaspoon freshly ground black pepper


2 large eggs beaten


All-purpose unbleached flour, as needed, for dredging


Salt and freshly ground black pepper


For the sauce:


1/4 cup extra-virgin olive oil


2 tablespoons tomato paste


1 cup water


1 1/2 teaspoons harisa (Tunisian hot chili paste of guajillo chili peppers, garlic, oil, caraway, and coriander)


1/2 teaspoon ground red chili








For the meatballs:


Preheat frying oil in a deep-fryer or 8-inch deep saucepan to 375 degrees F.


Bring a saucepan of lightly salted water to a boil and cook the whole cauliflower until tender, about 10 minutes. Drain well and break into small florets.





Place the meat, onion, cinnamon, parsley, tabil, salt, and pepper in a food processor, in batches if necessary, and process until well blended. Remove to a bowl.





Have a bowl of water handy to keep your hands wet while making meatballs. Meatballs are formed by flattening a lemon-sized portion of meat into a thin patty and wrapping the patty around a cauliflower floret to completely enclose. Form into an oval shape, then dip into the eggs and dredge in flour, tapping off any excess flour.





Cook the meatballs in oil until golden, about 4 minutes, without crowding the fryer. Remove with a slotted spoon to paper toweling to drain.





For the sauce:


Heat the extra-virgin olive oil over medium-high heat in a large saucepan. Dissolve the tomato paste in the water, and add to the pan along with harisa and ground red chili. Add the meatballs and cook covered until most of the liquid evaporates, about 25 minutes. Add a little water to rehydrate sauce if it is dries out before that time. Serve meatballs covered with sauce.
There are several ways to serve them in sandwiches. We like to make brown gravy and serve with meatball on a sandwich.





**********BROWN GRAVY


This recipe can be used to make either beef gravy or brown chicken gravy just by using beef broth or chicken broth. Always remember to use equal amounts of fat and flour and increase amount of broth accordingly. 3 tbsp. all purpose flour 2 - 2 1/2 c. broth 1/2 tsp. black pepper 1/2 tsp. salt


Strain broth from roast beef (or roast chicken). Remove excess fat by adding ice cubes and remove as it hardens. Add 3 tablespoons fat and 3 tablespoons flour to skillet and stir over medium heat until browned. Add salt and pepper, stir in broth, and bring to a boil. Continue stirring while gravy boils 2 to 3 minutes. If it gets too thick, add a little more broth or water. Serve hot.





or pour bbq sauce over meatballs and serve as a sandwich.
make a sauce from a jar of chili sauce, a small bottle of grape jelly and a few squirts of mustard.


mix it all together and add meatballs.
I love to make a beef broth and put mine in that and serve over wild rice. IF you want it thicker, like a gravy, simply add some flour/water mix.





You can also use a mix of chili sauce and grape jelly and make sweet and sour meatballs....you'll find many variations of that recipe on allrecipes.com





You could also do them in a gravy and serve over egg noodles.

Meatballs can be wrapped with phyllo dough or strips of crescent rolls (similiar to pigs or little smokies in a blanket) then baked and served with different kinds of dipping sauces, i.e. bbq, mustard, etc.
I do meatballs in a BBQ sauce. My hubby loves them over rice. Just pick your favorite BBQ sauce and simmer. I use 2 or 3 kinds mixed together.
Swedish meatballs are great. 1 1/2 lb. of hamburger makes about 20 of them.





1 1/2 lb. hamburger


1 egg


1/2 cup bread crumbs


1/2 diced onion


salt %26amp; pepper to tast


1/4 tsp cloves


1/4 tsp allspice


Shape into balls, roll in cornstarch or flour. Brown on both sides in oil in frying pan. Stir to scrape up brown bits and add water to half way up meatballs. Cover and simmer for 30 min. Thicken sauce with flour. Serve with mashed potatoes or creamed pasta.

sorry was gonna say grape jelly and chili sauce, oh well.
For quick and easy I would just suggest adding a jar or two of meat sauce and letting it simmer during the day. Maybe toss in a few herbs that compliment the ingredients you included in the meatballs.
I just add a can (or 2) of cream of mushroom soup and some milk.
My friend uses bbq sauce...with mini meatballs...sounds weird but I promise they are AMAZING.

    I am looking for 2 good recipes for Italian meatballs, to have with pasta.





    One is a normal one, the other is for a man who is allergic to onions, garlic, and vegs from that family, and also gluten.....a challenge or what????Italian meatball recipe?
    Here's a normal meatball recipe from Food Network. For your allergic man, just leave out the white bread, onion and garlic. Use a gluten free bread instead and add about a half cup of grated carrot (to replace the moisture of the onion). To add some extra flavor, add a teaspoon or so of italian seasoning.








    Italian-American Meatballs Food Network Kitchens





    2 slices white sandwich bread, stale and crusts removed (see note)


    1/2 pound ground pork


    1/2 pound ground veal


    1/2 pound ground beef chuck


    1/4 cup plus 2 tablespoons grated Parmesan


    1/4 cup plus 2 tablespoons grated Pecorino Romano


    1/4 cup chopped flat-leaf parsley


    2 teaspoons kosher salt


    1/2 medium onion, grated (about 1/4 cup)


    2 cloves garlic, minced


    1 large egg, beaten


    Freshly ground black pepper to taste


    1/3 cup olive oil, divided


    3 cups QUICK MARINARA SAUCE (see recipe)

    Grate the bread or pulse into crumbs in a food processor. In a small bowl toss the breadcrumbs with 1/3 cup cold water to re-hydrate.


    In a large bowl, combine the breadcrumbs, pork, veal, beef, Parmesan, Pecorino, parsley, salt, onion, garlic, and egg and mix until combined. Season the meat mixture with pepper.





    Using your hands, gently form the meat mixture into 18 slightly larger than golf ball-sized balls. (Packing the meat mixture too tightly together will result in tough meatballs). Refrigerate for at least an hour or up to 24.





    Heat half the oil in a large non-stick skillet over medium-high heat. Add half of the meatballs and cook, turning occasionally, until well browned on all sides, about 6 minutes. Transfer the meatballs to a plate. Drain the oil and wipe out the skillet, return to the heat, and repeat with the remaining oil and meatballs.





    Drain and wipe out the skillet again. Return all the meatballs to the skillet and pour in the marinara sauce. Bring to a boil, lower the heat, and simmer, covered, swirling the pan occasionally, until the meatballs are cooked through about 15 minutes. The cheese in the meat balls will start to melt when the meatballs are ready. Serve immediately with spaghetti or on sandwiches. These meatballs can be stored, covered in the refrigerator for 3 days or frozen for up to 6 weeks.








    Cook's Note: If your bread is fresh, dry it out in at 350 degree F for 10 to15 minutes.








    QUICK MARINARA SAUCE


    2 tablespoons extra-virgin olive oil


    1/4 medium onion, diced (about 3 tablespoons)


    3 cloves garlic, chopped


    3 1/2 cups whole, peeled, canned tomatoes in puree, (one 28-ounce can), roughly chopped


    Sprig of fresh thyme


    Sprig of fresh basil


    2 teaspoons kosher salt


    Freshly ground black pepper








    Heat the oil in a medium saucepan over medium-high heat. Saute the onion and garlic, stirring, until lightly browned, about 3 minutes. Add the tomatoes and the herb sprigs and bring to a boil. Lower the heat and simmer, covered, for 10 minutes.


    Remove and discard the herb sprigs. Stir in the salt and season with pepper to taste. Use now, or store covered in the refrigerator for up to 3 days, or freeze for up to 2 months.Italian meatball recipe?

    INGREDIENTS:


    鈥? 1/4 pounds (1 k) boned veal or pork, ground.


    鈥? ounces (125 g) pecorino Siciliano (if possible the variety with pepper corns in it, if not a mild Romano), freshly gra


    鈥? cup bread crumbs, moistened in milk and then squeezed dry

    PREPARATION:

    When you have finished making your meatballs, grill them to taste.





    Some people also include grated lemon or orange zest or juice (or both) in the filling.
    I use basic Ener-G brand Tapioca loaf for breadcrumbs. You can usually find it just about anywhere.





    If you're wanting to use them for the binding in the meatballs you can just grind them up in a food processor and use them as is. Use them the same way you would regular breadcrumbs.





    If you're wanting the toasted breadcrumbs, this is what I do -





    Melt some butter in a skillet over low to med-low heat and add the breadcrumbs. Stir them occasionally until toasted. You can add spices and seasonings as you go, tasting for flavor. This actually works very well.

    The recipe that I am looking for is from a small booklet with milk and I think it was a diet book featuring Karen Kain. If anyone has the recipe please post it.I need a recipe for Meatball Stroganoff?
    This is meatball stroganoff but NOT from that book.





    Have your chosen meatballs prepared and set aside.





    Boil two cups water with one tablespoon beef bouillon (or according to beef taste you want) thicken this with corn starch slurry ( 2 T. corn starch to 2 T. water ) Remove from heat. Add 1/2 cup sour cream and stir well and now add the balls. If the meatballs were cold then you will need to heat this again slowly over low heat after adding them to this sauce. Adjust your seasonings ; salt, pepper, bouillon.

    I make all my ground meat using a pretty free hand. But I have gotten a lot of fond compliments on ones I make pretty close to this:





    1lb ground meat (Some people suggest going like half pork/half beef or half turkey half sausage or all turkey or all beef, I personally am fond of lean beef)


    1 1/2 teaspoons of basil (or the proportional amount fresh is ideal)


    a heaping teaspoon of italian seasoning herb mix


    tablespoon or two of tomato paste (can be optional)


    a 1/2 c to 2/3 c of Parmesan breadcrumbs


    an egg


    a couple tablespoons of oats


    salt to taste


    pepper to taste


    2 cloves garlic minced


    1/2 a small onion, minced


    1/2 green pepper diced finely (opt)


    3 or so Tablespoons minced canned or fresh mushrooms (opt)


    if using a lean meat add 1 tablespoon olive oil (opt)





    Mix ingredients, allow to sit in fridge for an hour.


    Preheat oven to 350


    Form into balls of desired size, a dozen or so is pretty standard. 24 for small meat balls


    Place in a baking dish, cover with foil


    Place in oven for 15 minutes


    Remove foil, turn and replace uncovered in oven for 5-10 minutes (or until cooked thoroughly)





    Eat over pasta tossed with sauce, or in a sandwich with mozza or provalone or slice and top a pizza with them (use extra sauce and put under the cheese for yummiest results)

    Tear the bread into pieces and place in a small mixing bowl along with the milk. Set aside.


    In a 12-inch straight sided saute pan over medium heat, melt 1 tablespoon of the butter. Add the onion and a pinch of salt and sweat until the onions are soft. Remove from the heat and set aside.


    In the bowl of a stand mixer, combine the bread and milk mixture, ground chuck, pork, egg yolks, 1 teaspoon of kosher salt, black pepper, allspice, nutmeg, and onions. Beat on medium speed for 1 to 2 minutes.


    Heat the remaining butter in the saute pan over medium-low heat, or in an electric skillet set to 250 degrees F. Add the meatballs and saute until golden brown on all sides, about 7 to 10 minutes.

    1 (20 ounce) package ground beef


    1 egg, beaten


    1/3 cup Italian seasoned bread crumbs


    1 tablespoon garlic powder

    Preheat the oven to 350 degrees F (175 degrees C).





    Grease a 9x13 inch baking dish with the olive oil, and place it in the oven while preheating.





    In a medium bowl, mix together the ground beef, egg, garlic powder, onion flakes and bread crumbs using your hands. Using an ice cream scoop if possible, form the meat into golf ball sized meatballs. Place about 1 inch apart in the hot baking dish. Press down to flatten the bottom just slightly.





    Bake for 15 minutes in the preheated oven, then turn them over, and continue baking for about 5 more minutes, or until somewhat crispy on the outside. Serve with pasta and sauce or however you'd like

    1/2 cup dry breadcrumbs


    1/2 cup ground parmesan cheese


    1/2 teaspoon italian seasoning


    1/4 cup milk


    1 1/2 teaspoons dried onion flakes

    1/2 teaspoon worcestershire sauce


    2 eggs, beaten


    1/4 teaspoon garlic powder

    In large bowl, mix all dry ingredients.


    Add rest of ingredients and lightly mix, but mix well, with hands. Form into 20 meatballs.


    Place them on lightly oiled cookie sheet.


    Sprinkle tops lightly with coarse ground pepper.


    Bake in 400潞 over for 20-25 minutes. *Mine always take 22 minutes in my oven.


    If they are still just a little pink inside, it's ok if they are to simmer in a sauce, otherwise bake til done.


    Simmer in spaghetti sauce on low for 5-10 minutes
    I know this sounds like a lot of work but it makes about 16 meatballs and they have this complex, fantastic taste. These freeze and thaw beautifully, although they rarely stay in my freezer more than 2 weeks. If you like, add beef buillion cubes to the milk and skip the liquid beef broth.

    1 egg

    I use a variation of my meatloaf recipe:





    3 pounds ground beef


    3 large eggs


    1/2 to 3/4 cup Italian style bread crumbs


    1 packet Lipton's Onion or Beefy Onion Soup Mix


    1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand





    Mix all ingredients, form into a balls and bake at 350 degrees F for about 30 minutes.
    My favorite meatballs come from the frozen food section at the grocery store. All you have to do is bake them in the stove. Then while you are boiling your noodles and making your sauce, just add the meatballs to the sauce to cover. That is about as simple as I can get. Good Luck :)
    Actually some of the packaged frozen ones are good now. I made meatball soup with them and no one complained. But for real meatballs





    1 lb ground beef


    1 beaten egg


    1/2 C. seasoned bread crumb ( Progresso)


    1/3 C.cream


    seasoning to taste





    Combine all and brown in oil. Drain, add spaghetti sauce and simmer for 40 minutes. Serve over pasta.
    I mix the hamburger, egg and breadcrumbs or crushed saltines together
    1 lb ground beef, 1 package stove top stuffing mix, 1 egg, 1/2 can tomato soup (undiluted) 1/2 C. finely chopped onion if desired


    mix all together, seasonings included in stuffing mix, roll into 1 inch balls, place on cookie sheet or baking pan with sides, bake 30 mins. then add to Hunt's sauce, or Ragu. and put over top of spaghetti noodles. Makes a Great meatloaf recipe too.

    1/4 c Italian seasoning


    Roll into 1'; balls, as many as needed. Save remainder.


    In a large pot place meat balls, cook stirring to lightly brown on all sides, cook until well done. Drain grease.

    blend all together - roll into balls and foll in flour, brown then continue to cook in your sauce until sone.
    4 year olds don't usually like spicy foods, so don't use a lot of spices in the mix. I would suggest hamburger, 1 egg (this helps them not fall apart), a little salt, a little garlic powder, some dried basil and oregano powder. Shape the mixture into meatballs about an inch wide and fry them in a skillet until browned. Pour a jar of spaghetti sauce over the meatballs and pour that over cooked noodles.     Extra-virgin olive oil


    1 onion, chopped


    2 garlic cloves, smashed


    2 tablespoons roughly chopped fresh parsley leaves


    1 cup milk


    4 thick slices firm white bread, crust removed


    1 1/2 pounds ground beef


    1 1/2 pounds ground pork


    1 large egg


    1/2 cup freshly grated Parmigiano-Reggiano, plus more for serving


    Kosher salt and freshly ground black pepper


    4 cups heated Pomodoro Sauce, recipe follows, or good quality jarred tomato sauce


    1/2 pound mozzarella cheese, cut into chunks


    Leaves from 3 sprigs fresh basil


    1 pound spaghetti


    Bring a big pot of salted water to a boil for the spaghetti. Heat 3 tablespoons oil in an ovenproof skillet over medium heat. Add the onion, garlic, and parsley and cook until the vegetables are soft but still translucent, about 10 minutes. Take the pan off the heat and let cool.





    Pour enough milk over the bread in a bowl to moisten and let it soak while the onions are cooling. Combine the meats in a large bowl. Add the egg and Parmigiano and season generously with salt and pepper. Use your hands to squeeze the excess milk out of the bread and add that to the bowl along with the cooled onion mixture. (Hang onto the pan - you'll need it to cook the meatballs.) Gently combine all the ingredients with your hands or with a spoon until just mixed together. Don't overwork or the meatballs will be tough. Divide into 10 equal pieces and shape them into 10 nice looking meatballs.





    Preheat the oven to 350 degrees F.


    Heat a 3-count of oil in the frying pan over medium heat and brown the meatballs on all sides, about 10 minutes. Put them into a baking dish and spoon about half of the tomato sauce over. Shower with the mozzarella and drizzle with olive oil. Put the meatballs in the oven and bake until the meatballs are cooked through, about 15 minutes.





    Meanwhile, cook the spaghetti in the boiling water until al dente, about 8 minutes. Drain and put it onto a large serving platter. Pour on the rest of the sauce and mix well. Spoon the meatballs on top of the spaghetti and garnish with basil leaves. Serve immediately along with extra cheese.





    Pomodoro Sauce:


    1/2 cup extra-virgin olive oil


    1 medium onion, chopped


    3 garlic cloves, chopped


    2 (28-ounce) cans whole peeled San Marzano tomatoes, drained and crushed by hand, liquid reserved


    Kosher salt and freshly ground black pepper


    1/4 cup fresh basil leaves, torn into pieces








    Heat the olive oil in a large saucepan over medium-low heat. Add the onion and garlic and cook until the vegetables are soft, 4 to 5 minutes. Carefully add the tomatoes (nothing splashes like tomatoes) and about 1/2 cup of the reserved liquid and season with salt and pepper. Cook until the sauce is thick, about 15 minutes. Taste and adjust seasoning with salt and pepper. Bring to a boil, stirring for a few minutes with a wooden spoon to further break up the tomatoes. Reduce the heat and let simmer for 20 to 25 minutes.     Mix all of these ingredients together. Make meatballs without pressing the meat very tightly together as it makes a tough and chewy meatball.


    Fry meatballs in olive oil until browned





    Place in oven at 350 to finish cooking


    Add it to sauce and serve over pasta.

    INGREDIENTS:


    1 pound ground beef


    1 pound ground turkey

    Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.


    Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold it's shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.


    Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)


    Place cooked meatballs into Marinara Sauce and cook for 15 more minutes.

    In a large bowl, separate the meat with a fork and make a well. In another bowl, mix the breadcrumbs with the cheese, parsley, basil, and garlic; set aside.





    Beat the eggs with the milk and pour into the well. Using wet hands, knead the meat to absorb the liquid and mix in the double-seasoned breadcrumbs. Knead well, keeping your hands moist, until the meat is well mixed.





    Scoop the meat out and then roll with your hands to form a nice ball, about golfball size. Place about 1 inch apart or less, on a non-stick baking pan and bake at 400 degrees until golden brown.

    1 c. bread crumbs (Italian seasoned)

    2 tsp. grated Parmesan cheese (optional)

    For each 1# of ground chuck you will need:

    Directions:


    All of the mixing of ingredients is done with your hands - so don't be afraid to dig in and get messy!





    Break the ground beef up into small loose bits - add the egg and incorporate well into meat. Add the tomato paste and work in.Then take the two pieces of soft white bread to your faucet, and run water over them until totally saturated, then gently squeeze out the excess water just until it stops running and dripping excessively. Break into small pieces and add to meat mixture and mix in well by hand until you don't see hunks of bread.





    Then add all the rest of the ingredients mixing well - IF the mixture seems too soupy, I add a small amount of Italian flavored breadcrumbs in the can. But don't overdo this or they will taste like ';filler';





    Roll into large meatballs, place on Pam-sprayed cookie sheet and brown in a 375 degree oven - just until lightly browned - don't finish cooking them this way. Prob. about 5-10 minutes. Then add them to your sauce and cook as long as you desire - several hours is not too long. Also, when they come out of the oven from browning - you can cool them, place them in the freezer on a tray until frozen slightly, then store them for using some other time in zip-lock bags.

    5. Add rest of sauce ingredients, with 1/2 c water and meatballs; stir to mix. Bring to boiling; reduce heat; simmer, uncovered, 1/2 hour, stirring occasionally.


    6. Heat oven to 350掳F Grease a 13x9x2 inch baking dish. Cook lasagna as label directs. Drain; rinse in water.


    7. In a baking dish, layer half the ingredients: Lasagna, mozzarella, ricotta, tomato sauce with meatballs, parmesan cheese. Repeat. Bake 30-35 minutes. Makes 6 servings.

    1/2 pound ground pork

    1/2 pound ground beef chuck


    1/2 cup plus 2 tablespoons grated Parmesan


    1/4 cup chopped flat-leaf parsley


    2 teaspoons kosher salt


    1/2 medium onion, grated (about 1/4 cup)


    2 cloves garlic, minced


    1 large egg, beaten


    Freshly ground black pepper


    1/3 cup olive oil, divided





    Grate the bread or pulse into crumbs in a food processor. In a small bowl toss the bread crumbs with 1/3 cup cold milk to re-hydrate.


    In a large bowl, combine the bread crumbs, pork, veal, beef, Parmesan, parsley, salt, onion, garlic, and egg and mix until combined. Season the meat mixture with pepper.


    Using your hands, gently form the meat mixture into 18 slightly larger than golf ball-sized balls. (Packing the meat mixture too tightly together will result in tough meatballs). Refrigerate for at least 1 hour or up to 24 hours.

    Chipotle Meatballs Recipe











    Chipotle chiles are jalape帽o peppers that have been smoked and dried. They are often served in an adobo sauce made with chiles, garlic, vinegar, onions and tomatoes. We came across this recipe for Chipotle Meatballs recently in the New York Times (a corrected version of the recipe) and it sounded so good we gave it a whirl. The verdict? Excellent! Particularly good served with plain rice or tortillas. Quite spicy, best accompanied by something cool - sour cream, salad. It has been added to our list of new favorites.





    3 slices bacon in 1-inch pieces


    3 garlic cloves, peeled


    2 large eggs


    陆 cup bread crumbs


    Salt


    1 录 pounds ground pork


    陆 cup (loosely packed) coarsely chopped mint leaves, more for garnish


    1 28-ounce can diced tomatoes (preferably fire-roasted), drained of all but 录 cup juice


    1 or 2 canned chipotle chilies in adobo, stemmed, seeded and sauce reserved


    1 teaspoon dried oregano


    About 1陆 cups beef or chicken broth.





    1 Heat oven to 450 degrees. In a food processor, combine bacon and 1 garlic clove. Process until finely chopped. Add eggs, bread crumbs and 1 teaspoon salt. Pulse several times to combine thoroughly, then add pork and mint. Pulse a few more times until well combined but not a paste. Remove meat from processor.





    2 With wet hands, form meat into about 16 plum-size balls and space them out in a 13-by-9-inch baking dish. Bake until lightly browned, about 15 minutes.

    25 min 15 min prep


    4 servings





    500 g ground chicken


    1 egg, beaten


    2 tablespoons chopped fresh basil


    1/3 cup breadcrumbs


    1 tablespoon oil

    1 cup ready-made pasta sauce


    1/4 cup white wine


    1/4 cup cream


    2 tablespoons sliced almonds or slivered almonds, toasted





    1. Combine mince, egg, basil and breadcrumbs and mix well.

    Here are mine. (I ALWAYS cook them with the sauce which cooks for at lest 4 hours). I don't measure seasonings, so use your best judgment





    Preheat oven to 350 (you'll use the oven to brown them before putting in the sauce)


    1-1/2 to 2 lbs ground chuck

    I use about 1/2 to 2/3 cup of an herb stuffing mix soaked in milk. Squeeze out the milk, and add to mixture. Mix all together and make into desired size and place in baking pan and put in the preheated oven. Just keep them in there unti they start to brown, then add to your sauce.





    I used to brown in the fry pan, but no longer. That method required constant turning and causes grease splattering. Soooo much easier sticking them in the oven. Just don't cook too long... till just browned a little. They will be wonderfully tender cooked in your sauce. I've had meatballs in Italian restaurants that were so hard, and flavorless, it was obvious they weren't cooked in the sauce. Also, some people say you don't need to brown them. I've tried it without out, and they were disgusting. The slight browning firms up the outside of the meatballs.

    Get a 3 to 5 lb bag the mini frozen meatballs, a 12oz jar of cheap chilli sauce (the ketchup kind) and a 14oz jar of grape jelly. Mix all three together in a crock-pot and let simmer on high heat for about 6 hours (spoon them over 3 or 4 times during that time). then serve IN the pot with toothpicks.     Mix a pound of lean ground beef with four slices' worth of bread crumbs. Add a beaten egg, a few dashes of Worchestershire sauce, a tablespoon of ketchup, and a teaspoon each of minced onion and garlic.





    Mix thoroughly, form into walnut-sized meatballs, and bake at 350 degrees for approximately 25 minutes. Drain thoroughly, and place in a saucepan or crockpot along with a jar of grape jelly and a bottle of barbecue sauce. (Sweet Baby Ray's brown sugar barbecue sauce is great in this recipe!)





    Simmer for at least half an hour on the stove or for two hours on Low in the crockpot. Remove the meatballs to a serving dish, and serve with the remaining sauce as a dip.

    2 eggs

    Make the croutons into crumbs, mix all ingredients. Shape into meatballs. Place on jelly roll pan or cookie sheet with sides that has been oiled. Bake at 400潞 10 minutes or so, until done.

    1 jar grape jelly


    1 bottle Del Monte chili sauce


    melt jelly, mix in chili sauce, pour over meatballs
    Happyhenny is right the Heinz chilli sauce or Heinz cocktail sauce and the grape jelly is excellent together. If you are against that kind of flavor, another option is to mix some cream of chicken soup with some cream of mushroom soup and add some milk. Watch your amounts for how many meatballs, it is really salty without a decent amount of milk.
    Make your beef meatball %26amp; mix patte and season it with your favorite herbs!

    I cheat and buy the frozen meatballs. As for the sauce I add a jar of apricot preserves, an envelope of lipton onion soup and a bottle of catalina or french dressing (i prefer catalina)

    Buy a bag of frozen mini meatballs. Put in crockpot. Add one bottle of BBQ Sauce and one can of Cream of Mushroom Soup. Heat on high for an hour and a half.

    Ingredients:


    3 oz (75g) cashew nuts


    1 red pepper, seeds removed, sliced into thin strips


    1 lb skinless chicken breast fillets, cut into thin finger-length strips


    3 tbsp groundnut oil


    4 garlic cloves, finely chopped


    2 tbsp dry sherry (you can drink the rest of the bottle - it would be a crime to waste it)


    3 tbsp hoi-sin sauce


    2 tsp sesame oil


    5-6 spring onions, green part only, cut into 1-inch lengths





    Method:


    Heat wok/frying pan until hot (medium heat), then dry-fry cashew nuts for 1-2 minutes until brown. Remove nuts and set aside.


    Increase heat and add groundnut oil, then add garlic and let it sizzle for a few seconds, then add pepper and chicken and stir fry for 2 minutes.


    Add sherry and hoy sin sauce.


    Continue to fry until chicken is tender and all the ingredients are evenly glazed.


    Stir in the sesame oil, cashews and spring onions.


    Serve immediately (with boiled rice).

    3/4 c. cashew nuts


    1 bowl diced celery


    1 tsp. sesame oil


    1/2 c. water chestnuts


    2 c. oil

    SAUCE INGREDIENTS:





    1 tsp. light soy sauce


    1 tsp. dry sherry wine


    1/2 tsp. sugar


    1/4 tsp. salt


    1 tsp. dark soy sauce


    1/4 c. chicken broth


    1/8 tsp. pepper





    SAUCE: Combine ingredients in a bowl.





    Heat wok or deep skillet and add the oil. Turn heat to low and wait until oil is hot. Add chicken pieces to fry slowly. When the chicken has turned white, remove from wok and set aside.





    Remove all the oil, except about 2 teaspoons. Turn heat to high and add the sauce ingredients. When it comes to a boil, add cornstarch paste slowly and stir. Then add the chicken and cashew nuts, celery and water chestnuts. Keep stirring until gravy has thickened. Finally add the sesame oil.

    Marinade chicken cubes for 30 minutes. Deseed pepper and chili; cut the pepper into 1 inch pieces and shred the chili. Gently fry the cashews in 4 tablespoons of oil for 5 minutes, until lightly browned; remove and drain. Deep fry chicken for 2 minutes; drain well.


    Heat 1 tablespoon of oil and stir fry (high heat) onion and ginger for 15 seconds. Add pepper and chili and fry for 30 more seconds. Then add the chicken and seasoning sauce and stir while the sauce thickens. Add the cashews nuts. Serve immediately with rice. Serves 3 or 2 if very hungry.

    500 grams chicken mince


    half a cup of fresh breadcrumbs

    1 large teaspoon of chicken stock powder.





    Mix together with either: half cup roughly chopped fresh basil and same amount of crushed cashews OR 1 tub ';Copperpot Basil and Cashew Nut Dip'; found in refrigerated section of supermarket.

    -1lb of ground beef (preferably 75% or 80% lean)


    (you can use a mix of ground beef, ground pork, and ground veal if you prefer, I just find it to be a hassle to find all three at the same time)


    -1 clove fresh garlic minced or grated (I use a fine grater, a step up from a microplane because I'm not that good with a knife)


    - 1/4 cup parsley (fresh or dried, use less if using fresh)


    - 1/4 cup grated parmesan (parmigianno reggiano) cheese


    - 1/2 cup Italian seasoned breadcrumbs


    - 1 whole large egg





    Mix everything together in a large bowl. Shape into meatballs whatever size you desire - rollingt them like you would a snowball to throw. (I have smallish hands, so I get about 8 meatballs to this recipe) Bake them in a 400 degree oven on a baking sheet for 12-15 minutes OR brown them in a skillet (put 1 tablespoon of olive oil in the pan) until browned on all sides. Simmer in tomato sauce for at least 45 minutes to 1 hour. (longer is okay)

    don't eat that hamburger mince!! but an easy recipe is grate an onion and some carrot and mix into the meat with a squirt of ketchup, an egg, some salt and pepper and whatever herbs you may have. roll into balls and brown.
    I don't have a specific recipe, but i would suggest some ground beef/ground turkey, bread crums, salt, black pepper, ground chilli pepper/flakes, a few cloves of garlic, some onions, maybe some parsely too?     Combine and roll into balls. This is what I use and its tops. I dont like breadcrumbs cause it makes them mushy.

    1 oz dried porcini mushrooms


    3 cup beef stock or water


    1 1/2 lb ground (beef) chuck


    1 lrg onion finely minced


    6 slc white bread cut 1/4'; dice


    (get thin slice)


    Salt to taste


    Freshly-ground black pepper to taste


    12 oz crimini mushrooms


    (or mixed exotic mushrooms)


    2 tbl all-purpose flour


    1 cup heavy cream


    1 tbl sweet Hungarian (Szegedy) paprika


    1 cup sour cream plus


    more for serving


    6 sht pasta cooked








    Simmer dried mushrooms in beef stock for 15 minutes. Let sit for 1/2 hour, then drain through coffee filter, squeezing juice from mushrooms. Rinse the squeezed mushrooms and chop.


    Mix together the ground beef, onion, bread cubes, and seasoning. Form into 1-inch meatballs. Brown the meatballs, in batches, in a hot saute pan, and set them aside.


    Toss the crimini mushrooms in the flour and saute them in the same pan. Add the dried mushrooms, stock mixture and cream. Cook for 3 minutes. Stir in paprika.

    1 c. bread crumbs


    Minced onion or chopped onion to taste


    1/2 c. milk


    2 eggs


    2 tbsp. parsley flakes


    2 tsp. salt

    Mix ingredients together and make small meatballs. Brown and bake at 350 degrees for 35 minutes.

    1/2 pound ground beef


    1/2 pound ground veal


    1 pound ground pork


    2 cloves garlic, sliced razor thin then minced


    2 eggs


    1 cup freshly grated Romano cheese


    1 1/2 tablespoons chopped Italian flat leaf parsley


    salt and ground black pepper to taste


    2 cups stale Italian bread, crumbled


    1 1/2 cups lukewarm water


    1 cup olive oil





    Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.


    Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold it's shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.


    Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)


    Place cooked meatballs into Marinara Sauce and cook for 15 more minutes.

    The egg just is sort of a binder and helps add moisture. Use a regular recipe, but use fattier meat and maybe a little bit of cream. Don't forget to use the breadcrumbs since you aren

    Crockpot Sweet and Sour Meatballs:





    INGREDIENTS:


    1 pound ground chuck or round


    1 egg, slightly beaten


    1/4 teaspoon salt


    1/4 teaspoon pepper


    2 tablespoons fine plain breadcrumbs or corn flake crumbs


    2 teaspoons soy sauce, low sodium


    2 tablespoons grated or finely minced onion


    1 tablespoon cooking oil


    Sauce


    3 tablespoons vinegar


    3 tablespoons cornstarch


    1/2 cup sugar


    1 tablespoon soy sauce, low sodium


    1 large sweet bell pepper, cut into 1-inch pieces


    hot cooked rice


    1 can pineapple, chunks (15 ounces)


    PREPARATION:


    In a large bowl, combine ground beef, egg, 1 tablespoon cornstarch, salt, pepper, 1 teaspoon soy sauce, bread crumbs, and onion. Shape into 1 1/2 in balls. In a large skillet, lightly brown meatballs in the vegetable oil. Drain well. Transfer meatballs to slow cooker.


    In a small bowl, combine vinegar, sugar, 1 tablespoon soy sauce, cornstarch and bell pepper; stir to blend. Pour over meatballs. Cover and cook on LOW for 5 to 7 hours. In the last 30 minutes of cooking, stir in pineapple with juice. If thicker juices are desired, combine more cornstarch with a little cold water and add, stirring, until thickened. Serve with hot cooked rice.
    Everytime we have a get-together, I make my crock-pot meatballs %26amp; they are always a hit! Get a couple of pkgs of pre-cooked meatballs in the freezer section. Thaw, then place in crockpot. Pour over 1 bottle of bbq sauce %26amp; 1 jar of pineapple jelly or preserves. Heat over low til warmed thru, then serve in a dish with toothpicks.....

    Here's our favorite:





    1 pound of hamburger


    1 egg


    2 slices of white bread, crusts removed


    1 teaspoon dried oregano


    1/2 teaspoon garlic powder


    3 tablespoons of parmesan cheese (the dry kind)


    salt and pepper to taste.





    Mix everything together. Form into meatballs and brown in a little oil. Add to spaghetti sauce and let simmer till done.





    You can brown them completely until they are done and then you don't have to add them to the sauce. However, I think they taste better if they are finished in the sauce, and they add a great flavor to the sauce.





    Enjoy your dinner. Spaghetti and meatballs is one of my favorite meals.
    Ground meat, italian breadcrumbs, garlic (or powder), onions (chopped fine), tony's, egg, worchestershire sauce, and the secret - honey. Mix it all up, shape inton balls and bake for 20min at 350. then just dump into your sauce! yummmm ;) and let cook for at least another 20 to blend flavors

    24 ritz crackers crumbles


    1/4 cup milk


    3 tbls worchestshire sauce


    1 tsp salt


    1 tsp pepper


    1/4 cup parmesan cheese


    mix ingredients together from into balls and bake at 350 for 30 mins till done then add to favorite spaghetti sauce and simmer till hot

    1lb Ground Beef


    1 egg


    1 packet onion soup mix


    1/2 Cup rolled oats





    Mix all together, form into balls and fry, turning often to retain the shape until done.


    Drain off grease and add to the hot sauce.

    Swedish Meatballs


    Start to Finish: 50 minutes





    Ingredients


    1 egg, beaten


    1/4 cup milk


    3/4 cup soft bread crumbs (1 slice)


    1/2 cup finely chopped onion (1 medium)


    1/4 cup snipped fresh parsley


    1/4 teaspoon black pepper


    1/8 teaspoon ground allspice or nutmeg


    8 ounces ground beef or ground veal


    8 ounces ground pork or ground lamb


    1 tablespoon butter or margarine


    2 tablespoons all-purpose flour


    2 teaspoons instant beef bouillon granules


    1/8 teaspoon black pepper


    2 cups milk


    3 cups hot cooked noodles


    Snipped fresh parsley (optional)





    Directions 1. In a large bowl combine egg and the 1/4 cup milk. Stir in bread crumbs, onion, the 1/4 cup parsley, the 1/4 teaspoon pepper, and allspice. Add beef and pork. Mix well. Shape into 30 meatballs.





    2. In a large skillet cook half the meatballs at a time in hot butter over medium heat about 10 minutes or until done (an instant-read thermometer inserted into meatballs should register 160 degrees F), turning to brown evenly. Remove meatballs from skillet, reserving drippings; drain meatballs on paper towels. Measure 2 tablespoons drippings; if necessary, add cooking oil to make the 2 tablespoons.





    3. Stir flour, bouillon granules, and the 1/8 teaspoon pepper into drippings. Gradually stir in the 2 cups milk. Cook and stir over medium heat until thickened and bubbly.     Fred S - AM, etc. is right. Jack Daniels is the best bourbon around. Drink it, don't lose it in this recipe. Jim Beam or one of the cheaper ones. They say it should be something you'd drink about using wine and all that in cooking. True. But it needn't be the very BEST thing you'd drink, either.
    good liquor is for drinking. Just get something cheap to cook with.

    Some would argue with me but the fine qualities of a premium bourbon would not be discernible to the palate in a recipe and would do little to improve the dish over the least expensive bourbon. However , while you're cookin, you may want to down a W.L. Weller's 12 YO Mahattan. Weller's is a 'wheated' (as opposed to 'ryed') bourbon. It is very good indeed and much better than the ';no age on bottle' Makers Mark (also a wheated bourbon) that many people actually believe is a good.
    Woodfords... It has a very nice spicey aftertaste to it. btw, Jack is a sour mash, not a true bourbon

    INGREDIENTS


    1 pound ground beef


    2/3 cup evaporated milk


    2 (1 ounce) packages dry onion soup mix


    1/4 cup Worcestershire sauce


    1 cup ketchup


    1/2 cup packed brown sugar


    1/2 cup shredded chedder cheese








    DIRECTIONS


    Preheat oven to broil.


    In a medium-sized mixing bowl, combine hamburger, milk, onion soup mix, and Worcestershire sauce. Roll the mixture into small balls. Arrange meatballs on a cookie sheet. Broil for 10 minutes, or until cooked through.


    In a small bowl, mix ketchup and brown sugar. Transfer mixture to a slow cooker. Add the meatballs to the slow cooker.


    Cook meatballs on high for approximately 30 minutes

    INGREDIENTS


    1 (16 ounce) package frozen meatballs


    1 (18 ounce) bottle barbecue sauce


    1/4 cup ketchup


    DIRECTIONS


    Place prepared meatballs, barbeque sauce, and ketchup in a slow cooker. Let cook on a low heat for 4 hours, stirring occasionally.
    If you don't wish to use eggs try a meat jelly IE aspic. the eggs are only used to bind the meat together,


    Try Koftas as follows-


    1lb minced beef


    2 teaspoons dried onion flakes


    2 garlic cloves finely chopped


    1 tbsp finely chopped coriander leaves


    1 tbsp masala mix


    1tspgaram masala mix pinch salt


    blend altogether and form into small balls


    bake in oven gas 5 - 375fht or 190cels


    serve with or in a balti sauce

    balti base used in all balti dishes


    1pt milk


    4oz.mouli or if you can't get this i find turnip is just as good.


    2 tsp turmeric


    4oz. carrot


    add spice ball containing garam masala bay leaf coriander seeds and a little ginger


    cook gently until veg. is soft

    1tbsp ghee or veg oil


    2-3 garlic cloves finely chopped


    1tbsp masala paste


    1 tbsp tomato paste


    6oz-(175)gms tinned toms


    1tsp sugar


    salt and pepper to taste


    Heat ghee and fry all spices for aprox. 1 min. add balti basic sauce then after further 2 mins add koftas and serve sprinkled with some fresh coriander leaves.


    For a richer taste you can serve with a couple sp. of double cream.


    serve with pilau rice and a good nan bread
    The egg just is sort of a binder and helps add moisture. Use a regular recipe, but use fattier meat and maybe a little bit of cream. Don't forget to use the breadcrumbs since you aren


    tusing eggs, youll really need the bread crumbs to help bind it.
