My girlfriend is a vegetarian and I have been one since December. Swedish Meatballs (with egg noodles) is my all-time favorite dish, and I haven't had it in some time. I was wondering if there was some recipe for vegetarian swedish meatballs that I could follow?

Just buy some veggie meatballs... available at Trader Joe's, Whole Foods, probably Safeway and any other grocery store too. Here's a recipe from recipezaar.com

3 slices bread, crumbled
3 tablespoons onions, finely chopped
1/4 teaspoon ground black pepper
1/4 teaspoon ground nutmeg
3/4 cup skim milk or soymilk
2 (12 ounce) packages soy crumbles
1 1/2 tablespoons oil
2 tablespoons all-purpose flour (if you are using soymilk or skim milk add another tablespoon)
1 cup vegetable broth
1 cup soymilk or skim milk or fat-free half-and-half
plus 1 tablespoon powdered milk (with skim only)
1. Preheat oven to 325 degrees F (165 degrees C).
2. In a large bowl combine bread crumbs, onion, pepper, nutmeg. and burger-style crumbles until well blended. Add all but 2 tablespoons of milk and test if your ';meat'; will form a ball. If needed, because the mixture is too dry, add the additional milk. Form into 1 1/2 inch balls.
3. In a large skillet over medium heat, brown the 'meat' balls in oil. Remove with a slotted spoon and place in a 2 quart casserole dish.
4. Whisk flour into drippings in skillet; cook until bubbly, stirring constantly. Stir in broth and half-and-half/soy milk/skim milk and continue cooking, stirring, until sauce thickens and boils, about 1 minute. Pour over 'meat' balls .
5. Bake in preheated oven for 30 minutes.
If you can't procure any type of fake meat, you could make your own veggie meatballs. Here, yet again, is a recipe from recipezaar.com (it's just the first one that shows up on google):
Ingredients
# 4 eggs , slightly beaten
# 1 (1 1/4 ounce)envelope Lipton Onion Soup Mix
# 2 cups grated cheddar cheese
# 3/4 cup chopped walnuts
# 1 cup dry Italian style breadcrumbs
# 2 (1 1/4 ounce)envelopes vegetarian broth (I use G.Washington brown broth)
1. Mix ingredients together in order.
2. Refrigerate for 30 minutes.
3. Form into 1-1/4 inch balls and place on baking sheet sprayed with Pam.
4. Bake in 400 degree oven until brown, about 20 minutes.
5. (May be frozen now.) Place meatballs in casserole and cover with 2-3 cups boiling water and 2-3 cubes or envelopes vegetarian brown broth.
6. Meatballs should be within 1/2 inch of being covered with liquid.
7. Bake, covered, at 350 degrees for 1 hour (1-1/2 hrs if meatballs are frozen).
8. Or meatballs may be prepared in a crockpot on high setting for 1 hour (or 1-1/2 if frozen).

Wouldnt that be called Swedish Veggieballs then?? LOL
Couldnt you substitute Tofu in it? Or black beans I understand are good substitute for meat. Another option I saw on Food network last night a lady made Vegetarian chili and used Cashew nuts for her ';meat'; chunks.
I would think that you could follow your fave recipe but use one of those meat substitute products out there. I am not a vegetarian but am a cook and you may notice a texture difference but taste shouldn't be just too different. Some of my local stores have a fairly large 'fake meat' aisle.
