Spaghetti and Meatball Sauce
The trick to this recipe, as in most Italian cooking is to use the best ingredients you can find. The choice of meat is up to you, but I try to add a piece of both sparerib, and beef to the sauce, and prefer a combination of beef and veal, or beef and turkey for the meatballs. Here is the recipe;
For The Sauce:
2 Tbsp. Olive Oil
2 Cloves of Garlic, Minced
1 Small Onion, Chopped Fine
1 Stalk of Celery, Finely Chopped
2 or 3 Small Pieces of Meat (Pork, Beef, or Chicken)
Salt %26amp; Pepper
1/4 Cup Chopped Basil
1/2 Tbsp. Dried Oregano
1/2 Tbsp. Dried Thyme
1/4 Cup Chopped Fresh Parsley
Dash of Red Pepper Flakes (Optional)
2 (6oz) Cans Tomato Paste
1 (26 oz. can/box) Pureed Tomatoes
About 5 Cups water
3 Tbsp. Grated Parmesan Cheese
1 Pound Of Spaghetti or Pasta of Choice
Brown the meat pieces in the oil until well browned. Add the garlic, onion, and celery and saut茅 until tender. Add the paste, tomatoes, water and herbs, and bring to a boil. Season with salt and pepper to your own personal taste. Turn mixture down to a simmer, then drop the prepared meatballs into the sauce. Do not stir for the first 15 minutes or so until the meatballs begin to firm up.
Continue to cook for 2-3 hours, stirring occasionally, and adding extra water as needed if the sauce becomes too thick. This sauce, with or without the meatballs can now be used over your pasta of choice. Just before serving, stir the 3 Tbsp. of grated cheese into the sauce. Though most people would choose spaghetti, personally I prefer rigatoni or penne. Serve over pasta cooked al dente, and offer a little more parmesan cheese at the table. With the addition of a nice mixed salad and some crusty Italian bread, this pasta dish would easily make a complete meal. I would choose a robust Chianti wine to accompany this meal.
Meatballs:
1 lb. Ground Beef
1/2 lb. Ground Pork or Veal
Salt %26amp; Pepper
1 or 2 Cloves Garlic, Minced
2 Tbsp. Fresh Chopped Parsley
2 Tbsp. Grated Parmesan Cheese
1 Egg
1 Cup Soft Bread Crumbs
1/2 Cup Water
Add the bread crumbs to the water to moisten. Mix all the ingredients together with the bread crumb mixture. Shape into golf ball sized balls, and gently drop into the simmering sauce.

Meatballs
Ingredients
3 slices white bread with crust
1 cup milk
2 pounds ground beef
1 yellow onion, minced
4 cloves garlic, minced
1/3 cup finely chopped oregano
1 teaspoon cumin
2 teaspoon white wine vinegar
2 eggs beaten
1/2 cup olive oil
Flour, for dusting
Salt and freshly ground black pepper
Dunk bread quickly in milk and press the liquid out to dampen the bread.
Combine the beef, bread, onion, garlic, oregano, cumin, vinegar, eggs, salt, and pepper in a bowl and mix well. Take a large spoon of the mixture and roll into a ball until all the mixture has been rolled.
In a saute pan, add the olive oil and bring it to 360-degrees F for frying. Dust the balls in flour and add to the oil. Brown on all sides, leaving room in the pan to roll them around. Pull from the pan and drain on paper towels. Can anyone give me a recipe for meatball?
1/2 Pound of Ground Beef
1/2 Cup of Onion, Minced
1/4 Cup of Bread Crumbs (Italian flavored, if possible)
1 Egg, beaten
1 Tablespoon Garlic, Minced (you can increase or decrease depending on your love of garlic)
1 Tablespoon Oregano
1 Tablespoon Basil
1/2 Tablespoon Savory
Salt and Pepper
Beat the egg, mince the onion and mix everything together in a bowl. Form into SMALL balls, for best results. Coat a skillet with PAM or something similar, to keep the meatballs from sticking initially and cook until brown and nicely crispy. Simple and delicious.
How to Make Meatballs.
Step 1 Use your choice of meat. Ground beef, pork, veal or a combination of these work well. To lower the fat content, choose ground chicken or turkey.
Step 2 Mix 2 lbs. of ground meat with 1 and 1/2 tbsp. of herbs--basil, Italian spice mix or oregano. Grate 1 cup of fresh parmesan or romano cheese and add with 2 cups of bread crumbs. Salt and pepper, then mix in 2 eggs to bind. If more liquid is needed, slowly add milk. The mixture needs to be moist, but still hold together when formed into balls.
Step 3 Form the meat mixture into balls about 1 and 1/2 inch in diameter. Don't overwork. This results in a denser product.
Step 4 Cook the meatballs using your favorite method. Baking on a rack over a baking sheet at 350 degrees for 20 to 30 minutes is the easiest method, but you can also fry them in a skillet over medium heat for 7 or 8 minutes.
Step 5 Drain completely, add sauce and heat well. Make your own spaghetti sauce, barbeque sauce or brown gravy for best results, but store-bought is acceptable and quicker.
Step 6 Cook in a slow cooker for an alternate method. Brown the meatballs first, then add to slow cooker along with sauce and cook according to manufacturers' instructions.
Step 7 Serve meatballs over cooked rice or noodles and enjoy.
I use this recipe all the time, and have had many compliments on it.
I also like using a cookie scoop to make the meatballs. (A mellon baller would work the same). It makes them all the same size, for easy cooking. :)
