I'm really bad at making meatballs-they always fall apart. Are there any good traditional recipes. If you have non traditional recipes thats fine too. I want something easy because I'm a beginner. Thanks in advance.Any Good Meatball Recipes?
I am married to an Italian with a huge family and they all agree that the real secret to great meatballs is bread. Not breadcrumbs, whole slices of bread! At least 2 slices per pound of meat. The more bread, the lighter and fluffier the meatballs. Take the bread and put it into a small bowl of water. Mash it down so the bread is soaked. Then grab the bread like a hunk and squeeze the water out. It is not pretty but it makes the yummiest of meatballs. Rips little pieces off the bread and add it to your meat mixture. (ground meat, eggs, spices, etc) Mix it in so it is evenly distributed. Then form your meatballs. Call me when you guests rave! Good Luck!Any Good Meatball Recipes?
Meatballs
I know this sounds like a lot of work but it makes about 16 meatballs and they have this complex, fantastic taste. These freeze and thaw beautifully, although they rarely stay in my freezer more than 2 weeks. If you like, add beef bullion cubes to the milk and skip the liquid beef broth.
Delicious with cooked pasta or as a meatball sandwich.
陆 cup unseasoned dry bread crumbs
陆 cup Romano or Parmesan cheese, finely grated
录 cup whole milk
录 cup low-sodium beef broth
录 cup chopped fresh parsley
1 egg, beaten
1 teaspoon dried oregano
2 teaspoons garlic, minced
2 teaspoons kosher salt
2 teaspoons ground black pepper
1 teaspoon dried basil
陆 teaspoon dried pepper flakes
Pinch nutmeg
1 LB ground turkey or ground meat of your choice
Yield: about 16
Combine all ingredients and stir thoroughly with a fork.
Bake at 450F for 25 minutes or fry as desired.
DIRECTIONS:
Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.
Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold it's shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.
Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)
Place cooked meatballs into Marinara Sauce and cook for 15 more minutes.
Sweet and Sour Meatballs

3 tablespoons cornstarch
1/2 teaspoon ground ginger
1/2 teaspoon seasoning salt
1 large carrot, diced
1 large green bell pepper, cut into 1/2 inch pieces
Here is a unique spin on meatballs. I've never had a problem with them falling apart!

* 1/2 onion, cut into chunks
* 2 jalapeno peppers, halved and seeded
* 1 pound ground turkey
* 3 tablespoons blue cheese
* 1/2 cup bread crumbs
* 3 egg whites
* 3 tablespoons olive oil
* 1 1/2 tablespoons soy sauce
* 1 tablespoon dried parsley
* 1 tablespoon Italian seasoning
* 1 tablespoon ground black pepper
* 1 teaspoon chili powder

DIRECTIONS
1. Preheat oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with aluminum foil and set aside.
2. Pulse garlic cloves in a food processor until minced. Add onion and jalapeno, and pulse until minced again. Scrape the onion mixture into a large bowl along with the turkey, blue cheese, bread crumbs, egg whites, and olive oil. Season with soy sauce, dried parsley, Italian seasoning, pepper, and chili powder. Mix well.
3. Roll the mixture into 2 inch balls, and place onto prepared baking sheet. Bake in preheated oven until golden brown, and no longer pink in the center, about 25 minutes.
Baked Meatballs:
Make these ahead, then freeze them for superfast meatballs anytime. They're also great as appetizers and in sandwiches.
1 1/2 pounds ground beef
1 large egg, lightly beaten
3/4 cup quick-cooking oats, uncooked
3/4 cup milk
1 teaspoon salt
1 teaspoon Italian seasoning
1/4 teaspoon pepper
3 tablespoons all-purpose flour
1 1/2 teaspoons paprika
1/2 teaspoon salt
Combine first 7 ingredients; shape into 1-inch balls.
Combine all-purpose flour, paprika, and salt. Gently roll meatballs in flour mixture, and place on a lightly greased rack in a foil-lined 13- x 9-inch pan.
Bake at 400掳 for 25 to 30 minutes. Drain on paper towels. Serve with your favorite sauce.
NOTE: To freeze, cool completely, and seal in an airtight container. To serve, place in a single layer on a baking sheet; bake at 400掳 for 10 to 15 minutes.
Yield: Makes 4 dozen
All you need is hamburger meat, VERY finely minced garlic and onion, egg , bread crumbs,italian seasoning and a little sauce. After you form them, let them sit for a bit and dry out. Fry in olive oil and add to sauce.
A couple meatball recipes here, also a meatloaf recipe you can use, just make meatballs out of the mixture.
