quorn mince was on special offer in the supermarket so i bought some. i was planning on making spaghetti and meatballs with it. does anybody have a good recipe for this. or do you have any other ideas of what i can make with it.

Veggie Meatballs (but you could use mince and have normal meatballs). Makes about 16
1 small red onion chopped
1clove garlic, chopped
200g veggie mince (I use Quorn)
1tsp dried mixed herbs
1tsp of smoked paprika
2-3 tbsp of passata/tinned toms (I usally use passata but I don鈥檛 think it matters much)
11/2 slices of bread made into breadcrumbs
1 beaten egg
Heat some olive oil and fry onion and garlic until soft
Add mince with herbs and tomatoes, cook for about 5 mins (until it is cooked through if you are using meat rather than veggie stuff)
Stir in breadcrumbs, leave to cool and then stir in the egg.
Shape into walnut size balls (you can freeze any you don鈥檛 want immediately at this point)
Place on a greased baking sheet for about 20 mins (200/400/gas mark 6)';

I am a former chef and make one with quorn and TVP similar to the other person, I do not use breadcrumbs as they are from white bread, I tend to use potato starch or soya flour, cook my onions, even mince some mushrooms, with the 2 other product the cooked onions and even sauteing the mushrooms to add some moisture, spices like fresh garlic, parsley, oregano, salt, pepper even a bit of soya parmesan cheese.
I make up the mixture with a bit of HOT veggie broth to soak into the other ingredients, let it stand and rest, and then make my base sauce with organic tomato products and veggies, I make up the meatball like items and when the sauce has come to the simmer and them and cover, I do mine in a crockpot and let it cook for at least 4-5 hours, but on the stove top on a medium low heat 45-90 minutes, depend on if you use tomato paste or sauce for thickening.
