SWEDISH MEATBALLS
Sauce:
1 onion, chopped
2-6 oz cans tomato paste
2 cups water
1 1/2 cups (20 oz) canned chopped tomatoes
1 tsp sugar
t tsp salt
1/2 tsp black pepper
1 bay leaf
Saut茅 chopped onions in margerine until tender. Remove from grease and place into 4 qt saucepan. Add remaining sauce ingredients. Simmer over low heat for about 45 minutes, stirring often being careful not to let stick to bottom.
While sauce is simmering, make meatballs.
Meatballs:
1 lb hamburger
1 cup bread crumbs, unseasoned
1/2 cup Kraft Parmesan cheese
1 tsp parsley flakes
1/2 cup milk
2 well-beaten eggs
Mix all meatball ingredients together. Form into bite-size meatballs. Place on nonstick cookie sheet. Bake at 350 degrees until cooked through, approximately 30-45 minutes. Once meatballs are cooked, add them to sauce mixture. Simmer all together for approximately another 30 minutes, stirring often.
Great recipe for hors d'oeuvres. To serve at cocktail parties, place cooked mixture into crock pot to keep warm -- serve with toothpicks. Pour over cooked thin spaghetti for spaghetti %26amp; meatballs. For fantastic meatball subs: Place into slightly toasted sub roll and top with provolone cheese. Place on foil-lined pan and broil until cheese melts.
Makes about 40 meatballs.

3/4 lb. lean ground beef
1/4 lb. ground pork
1 c. light cream
1 egg
1 1/2 tsp. salt
1/8 tsp. pepper
1/2 lb. ground veal
1 1/2 c. soft bread crumbs
1/2 c. chopped onion
1/4 c. finely chopped parsley
1/4 tsp. ginger
1/8 tsp. nutmeg
GRAVY:
2 tbsp. all purpose flour
1/2 tsp. instant coffee
1 c. light cream
Have meat ground together twice. Soak bread in cream for 5 minutes. Cook onion in 1 tablespoon butter until tender. Mix meats, crumb mixture, onion, egg, parsley, and seasonings. Beat vigorously until fluffy (5 minutes on medium speed or 8 minutes by hand). Form in 1 1/2 inch balls (easier to do with wet hands and chilled mixture). Brown lightly in 2 tablespoons butter, shaking skillet to keep balls round (don't try to do too many at once). Remove balls. Reserve drippings.
Make gravy: Stir flour into drippings in skillet; add light cream and coffee. Heat and stir until gravy thickens. Return balls to gravy, cover, cook slowly about 30 minutes, basting occasionally. Makes 3 dozen 1 1/2 inch balls.
AND
SWEDISH MEATBALLS
1/2 c. bread crumbs

3 tbsp. butter
1/2 lb. ground meat
1/2 lb. ground lean pork
1 egg
2 tsp. salt
1/2 tsp. pepper
1/3 c. water
1/3 c. sherry
Soak bread crumbs in milk. Chop onion fine and cook in 1 tablespoon butter until slightly brown. Add meat, onion, egg and seasoning to bread crumb mixture. Mix well. Form meat balls by scooping up some meat on a teaspoon which has been dipped in hot fat. (Most Swedish cooks always do this so meat slips off spoon easily.) Brown meat. Shake skillet to brown evenly on all sides. When all meatballs are browned, add about 1/3 cup water and 1/3 cup sherry to skillet. Cook very gently over low heat for about 15 minutes or until liquid is absorbed. Makes 6 to 8 servings.

2 pounds ground beef
1 cup fresh bread crumbs
1 cup finely grated Parmesan
1 heaping tablespoon chopped fresh basil
1 heaping tablespoon chopped fresh parsley
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/8 teaspoon ground cayenne pepper
2 cloves garlic, minced
3 eggs
3 tablespoons olive oil.
1. In a large bowl, mix all ingredients except olive oil by hand, using a light touch. Take a portion of meat in hand, and roll between palms to form a ball that is firmly packed but not compressed. Repeat, making each meatball about 2 inches in diameter.
2. In a large, heavy pot heat olive oil over medium-high heat. When it shimmers, add meatballs in batches. Do not crowd. Brown well on bottoms before turning, or meatballs will break apart. Continue cooking until browned all over. Remove meatballs to a plate as each batch is finished. Let meatballs cool slightly; cover and refrigerate until needed

Here's a great sour cream sauce:
1 cup sour cream
2 tablespoons water
4 teaspoons fresh lemon juice
1/4 teaspoon salt
1/2 cup finely chopped fresh chives
Freshly ground black pepper
Blend sour cream, water, juice, salt, and chives in a blender until mixture just turns pale green. Season with pepper.
Then heat it up in a saucepan until simmering then dump in meatballs and let them sit in there until your ready to serve.
*Note: Let them heat up in the sauce for about 10 minutes if there still frozen, if thawed then just 5 minutesGood Swedish Meatball Recipe?

The Quickest Swedish Meatballs Recipe
My mother who is Swedish hates when I make this quick dish (she spends all day making Swedish Meatballs) but all the girls at work love it and always ask me to make it. I don't tell them how quick it is. Sometimes I do make my own meatballs and then throw them into the crockpot for this very quick and delicous dish.
Ingredients
1 package frozen meatballs
2 cans cream of mushroom soup(you can mix and match the soups; like cream of celery, cream of chicken, golden mushroom soup, etc)
8 ounces sour cream
2 teaspoons soy sauce
Directions
1Place all ingredients in a crock pot.
2Cook on low for at least 5 hours.
Swedish Meatball Recipe
1lb of minced beef
onion - finely chopped
1 cup of soft breadcrumbs or oats
1 egg
Milk (about 1/2 decilitre)
Soak oats or breadcrumbs in milk for 1/2 hour
Add mince and mix until smooth and well blended together
Add onion - mix well
Finally add egg and salt and pepper
Roll into little balls and fry in margarine for about 10 minutes
