Does anyone know the recipe for Gordon Ramsey's New Jersey's best meatball recipe?????

This appeared on last nights Kitchen Nightmares episode.Does anyone know the recipe for Gordon Ramsey's New Jersey's best meatball recipe?????
In one of his books he has this as a Meatball Best recipe.

I love that show. I will be checking back to see what you find out!
It wouldn't be in any of his cookbooks, seeing as it's actually the restaurant owner's recipe and, sadly, i don't think he's going to be telling any of us how to make them.

    add three tablespoons of water to one pound of 80% lean chuck, roll into balls one inch or so, bake at 350 degrees for fifteen minutes.





    The water keeps the meat tender and bakes off. No need for spices if you put them in sauce. If using them as snacks, have a dip handy or just Worcesterchire Sauce and ketchup.Meatball recipe for a busy single parent?
    If you like, add beef bullion cubes to the milk and skip the liquid beef broth.





    Delicious with cooked pasta or as a meatball sandwich.








    1 LB ground beef or ground meat of your choice


    陆 cup unseasoned dry bread crumbs


    陆 cup Romano or Parmesan cheese, finely grated


    录 cup whole milk


    录 cup low-sodium beef broth


    录 cup chopped fresh parsley


    1 egg, beaten


    1 teaspoon dried oregano


    2 teaspoons garlic, minced


    2 teaspoons kosher salt


    2 teaspoons ground black pepper


    1 teaspoon dried basil


    陆 teaspoon dried pepper flakes


    Pinch nutmeg





    Yield: about 16 golf-ball sized meatballs





    Combine all ingredients and stir thoroughly with a fork.


    Bake at 425F for 25 minutes or fry as desired.





    To freeze: place raw meatballs on cookie sheet, 1 inch apart and freeze one hour. Pop the frozen meatballs off the tray and place in a zipper-type baggie. Roll up and return to freezer. To use, bake from frozen at 425F for 30 minutes.
    1 pound ground beef


    1/3 cup fine dry bread crumbs


    3 medium cloves garlic


    1 teaspoon salt


    1 medium onion, finely chopped


    1 large egg


    1/3 cup grated Parmesan cheese


    2 tablespoons water, or as needed


    1/8 teaspoon ground black pepper





    Preparation:


    Line a large shallow baking pan with foil; oil lightly. Combine all ingredients, using just enough water to moisten. Shape into meatballs, about 1 1/2 to 2 inches in diameter.





    Broil the meatballs about 8 inches from the heat source for about 10 minutes. Turn and broil for 10 minutes longer.





    Put the meatballs in a large saucepan and cover with your favorite pasta sauce, homemade or purchased. Cover and simmer for 20 to 30 minutes.


    Serves 6 (about 18 to 24 large meatballs).

    ****Zesty Porcupine Meatballs****





    1 egg


    2 (10.75 ounce) cans condensed tomato soup


    1/4 cup instant rice


    1/4 cup chopped onion


    1 tablespoon chopped fresh parsley


    1 teaspoon onion salt


    1/4 teaspoon ground black pepper


    1 pound lean ground beef


    1/4 cup Worcestershire sauce





    DIRECTIONS


    Lightly beat egg with a fork, then add a heaping tablespoon of the soup and mix lightly. Mix in rice, onion, parsley, onion salt and pepper. Stir in the ground beef and mix well with hands. From mixture into 1 1/2 inch round meatballs.


    Coat a large skillet over medium heat with cooking spray. Cook meatballs and brown on all sides.


    Combine remaining soup with Worcestershire (you can increase or decrease Worcestershire to your liking), stir until smooth, then spoon over meatballs. Cover with lid and simmer for 20 to 30 minutes, stirring every few minutes.
    Make-Ahead Meatballs





    Meatballs:


    4 eggs


    2 cups dry bread crumbs


    1/2 cup finely chopped onions


    1 tablespoon salt


    2 teaspoons Worcestershire sauce


    1/2 teaspoon white pepper


    4 pounds lean ground beef





    In a large bowl, beat eggs. Add the next five ingredients. Add beef; mix well. Shape into 1-in balls, about 12 dozen.





    Place in single layers in ungreased 15-in X 10-in X 1-in baking pans.





    Bake at 400潞F for 10-15 mins or until no longer pink, turning often; drain. Cool. Place about 30 meatballs each into freezer containers. May be frozen for up to 3 months.





    Yield: 5 batches (about 30 meatballs per batch).

    Freezer meatballs taste horrible. Can you find time to buy 2 lb. gr. beef and a ';Meat Loaf'; seasoning packet (in the spices aisle). Follw the directions but instead of meat loaf, make meat balls. saves time in doing a meatball recipe. Have fun!

    Mine is using three kinds of meat..I never have left overs and even people who don't usually like meatballs love mine.


    INGREDIENTS


    1 pound ground beef


    1/2 pound ground sausage(we use Owens or Jimmy Deans)


    1/2 pound ground pork


    2 cloves garlic, minced


    2 eggs


    1 cup freshly grated Romano cheese


    1 1/2 tablespoons chopped Italian flat leaf parsley


    salt and ground black pepper to taste


    2 cups stale Italian bread, crumbled or boxed kind


    1 1/2 cups lukewarm water


    1 cup olive oil








    DIRECTIONS


    Combine beef, sausage, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.


    Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold it's shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.


    Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)


    Place cooked meatballs into Marinara Sauce and cook for 15 more minutes.

    yes, i can, add lots of italian cheese, not Parmesan, but romano. here is my recipe:


    Simply mix together 2lbs ground meat [minced]


    2 eggs


    1/2 cup bread crumbs


    2 large cloves of garlic, chopped finely


    1/3 cup of grated italian cheese like romano [add more to make them fantastic]


    1/4 cup of water


    tsp each salt, pepper and dried parsley


    mix together well with hands. i fry the meat balls slowly in olive oil in a heavy skillet, or, add to tomato sauce and let them cook slowly. don't stir the sauce until the meatballs float or they will break apart.Can someone tell me what the secret is to their own perfect meatball recipe?
    Adding onion powder is the first step. Second is adding a tiny bits of diced sweet red pepper. that gives it a little kick. And the most important thing is to make them very small. A bit larger than a quarter. This gives them a nicer flavor and keeps the meat moist not bulky.

    The meat mixture is the main ingredient , I use veal , pork, beef mixture , the rest is my secret.
    I crush some fennel seed and add to the mixture, and I wet the breadcrumbs with milk before mixing.

    EASY MOIST MEATBALLS





    1 lb. ground beef


    5 slices white bread


    Garlic salt


    Onion salt





    Place beef in bowl. Saturate each slice of bread. Squeeze slightly and drop in bowl. Add garlic and onion salt. Amount personal preference. (I use approximately 1/4 teaspoon of each.) Mix thoroughly, roll into balls and simmer for approximately 30 minutes in spaghetti sauce or gravy.
    Meatballs with sauerkraut


    1 lb. ground beef


    1 egg


    1/4 cup coarse bread crumbs


    1/2 t. salt


    1/4 t. pepper


    1 cup catsup


    1 cup water


    1/2 cup gingersnap crumbs


    1/4 cup brown sugar. firmly packed


    1/2 t. salt


    1 8-oz can sauerkraut





    Mix together meat, egg, bread crumbs, salt and pepper. Shape into 1 inch balls. Simmer catsup, water, and cookie crumbs for 5 minutes. Add brown sugar, salt and sauerkraut. Heat to boiling; add meatballs. Lower heat and simmer for 45 minutes. Serve 4 to 6.

    Can be prepared in 45 minutes or less.





    Ingredients





    1 pound combined beef, veal, pork (must be fresh)


    3 large eggs


    1 cup grated Romano Locatelli Cheese


    1 cup bread crumb


    1 clove garlic - minced


    1 tablespoon salt





    Preparation





    (All mixing is done be hand)


    In a large bowl mix beef/veal/pork with eggs. Then add bread crumb, cheese, and salt. Finally add minced garlic in stages. Add a little then mix. Add some more, then mix. This way all the garlic does not end up in one meatball. Now, it's time to roll up the balls. Average size is roughly 2 inches in diameter. I usually get around 18 to 20 meatballs per pound.





    IMPORTANT! Do not cook meatballs in your pasta sauce! Meatballs cooked in sauce loose their flavor. The real key to a tasty meatball is cooking the them in an oven. So, heat oven to 375. Place meatballs on a rack - then on a cookie tray.





    Bake for 12 minutes on one side then 10 minutes for the other.
    I am at this moment eating them. Turkey mince or ground Turkey, a stock cube, onion and basil or your favourite herb.


    I have had mine with a tomatoey paprika sauce.
    Use 2 parts ground beef and 1 part ground pork and add one egg, salt %26amp; pepper and bread crumbs. Form into balls and fry them up to brown them then bake them until cooked.

    Chipotle chiles are jalape帽o peppers that have been smoked and dried. They are often served in an adobo sauce made with chiles, garlic, vinegar, onions and tomatoes. We came across this recipe for Chipotle Meatballs recently in the New York Times (a corrected version of the recipe) and it sounded so good we gave it a whirl. The verdict? Excellent! Particularly good served with plain rice or tortillas. Quite spicy, best accompanied by something cool - sour cream, salad. It has been added to our list of new favorites.





    3 slices bacon in 1-inch pieces


    3 garlic cloves, peeled


    2 large eggs


    1/2 cup bread crumbs


    Salt


    1 录 pounds ground pork


    1/2 cup (loosely packed) coarsely chopped mint leaves, more for garnish


    1 28-ounce can diced tomatoes (preferably fire-roasted), drained of all but 录 cup juice


    1 or 2 canned chipotle chilies in adobo, stemmed, seeded and sauce reserved


    1 teaspoon dried oregano


    About 1陆 cups beef or chicken broth.


    1 Heat oven to 450 degrees. In a food processor, combine bacon and 1 garlic clove. Process until finely chopped. Add eggs, bread crumbs and 1 teaspoon salt. Pulse several times to combine thoroughly, then add pork and mint. Pulse a few more times until well combined but not a paste. Remove meat from processor.





    2 With wet hands, form meat into about 16 plum-size balls and space them out in a 13-by-9-inch baking dish. Bake until lightly browned, about 15 minutes.





    3 While meatballs bake, combine tomatoes, 录 cup tomato juice, chipotles, 1 to 2 tablespoons chipotle sauce, oregano, remaining garlic cloves (cut in half) and 陆 teaspoon salt in a blender or food processor. Process to a smooth pur茅e.





    4 When meatballs are ready, spoon off rendered fat from baking dish, then pour tomato mixture on top, covering meatballs evenly. Bake until sauce has thickened somewhat, 15 to 20 minutes.





    5 Heat broth in a small saucepan. Divide meatballs among four dinner plates, leaving sauce behind. Stir enough broth into sauce to give it a spoonable consistency. Taste and season with salt, if necessary. Spoon sauce over meatballs, decorate with extra mint leaves, if you wish, and serve.





    Serves four.
    GREEK MEAT BALLS





    1 1/2 lbs. ground beef


    1/3 cup uncooked rice


    1/2 cup canned tomatoes


    1 large onion, finely chopped


    3 tablespoons fresh parsley, minced


    salt and pepper


    2 eggs, beaten


    6 cups bouillon





    Combine all ingredients except bouillon, kneading after eggs are added. Roll lightly into 1 to 1 1/2 inch balls. Bring bouillon to a boil and drop in meatballs. Reduce heat to a simmer, then cover and cook for 20-30 minutes. Meatballs are cooked when they rise to the surface.





    Sauce:





    2 eggs, beaten


    juice of one lemon





    To make egg and lemon sauce, beat eggs well, stir in lemon juice and 1 tablespoon of broth (in which the meatballs were cooked).





    Makes an unusual hors d'oeuvre.





    Variation: Supply toothpicks and serve without the sauce.

    Preparation





    Preheat oven to 350掳F. Spray heavy large baking sheet with nonstick vegetable oil spray. Combine ground beef, grated Parmesan cheese, eggs, chopped fresh parsley, crushed cornflakes, minced garlic, dried oregano, ground white pepper and salt in large bowl and blend thoroughly.     Bring marinara sauce to simmer in heavy large saucepan.

    1Pre-heat panini grill to medium-high.


    2Slice meatballs into 1/4'; rounds. Warm meatballs and marinara sauce in the microwave.


    3Butter 1 side of each slice of bread, lay butter-side down on your work surface.


    4On one slice of bread, layer ingredients in the following order: 1oz cheese, marinara sauce, meatball slices, more marinara sauce, remaining cheese, top piece of bread, with buttered sides facing out.


    5Place assembled sandwich on the hot grill, and close, pressing down for about a minute. Continue cooking for a few minutes, until golden brown.

    If you're a true meatball lover, the key thing Subway's sandwich does is make you crave more of their yummy, yummy meatballs. Each 6-inch sandwich contains only 4 tiny (1录-inch, 3/4-ounce) meatballs. Being an East Coaster -- raised Italian, I take issue with that. We like meat. In fact, we expect meat. So I made my meatballs a bit bigger, while reducing the fat by more than 50 percent.





    Another objection I have is that Subway puts American cheese on a Meatball Marinara sandwich. Do they even know what American cheese is in Italy? Though I've kept the recipe true to Subway, I always add mozzarella to mine, and I invite you to do the same. Plus, I've found some amazingly tasty low-fat mozzarella cheeses. If you disagree with me (I'm sure many of you will), feel free to stick with American. I promise not to take it personally.





    * Subway said customers could choose from Swiss, cheddar, provolone, Pepper Jack or mozzarella for their meatball sub.
    Just get any tomato and garlic sauce from a supermarket. Its almost identical, and then just put the meatballs in. Buy some bread and hey presto.

    2 eggs


    1/2 c. Romano cheese, grated

    1 tsp. oregano, crushed


    Dash of pepper





    4 submarine sandwich buns OR sm. loaves French or Italian bread

    To make sauce, cook and stir onion and garlic in olive oil until tender. Stir in tomatoes, tomato sauce, parsley, salt, oregano and basil. Heat to boiling, stirring occasionally, reduce heat and simmer, uncovered 1-1 1/2 hours. when sauce is almost finished simmering, brown ground beef in separate skillet, drain off fat, and stir into sauce. Simmer another 20 minutes.


    For meatballs, soak bread in water 3 minutes, then squeeze dry and add the ground beef, eggs, Romano cheese, salt, parsley, garlic, oregano and pepper. Form into 16 meatballs. Bake at 350 degrees for 30 minutes, or until done.


    To assemble sandwiches, put 4 meatballs in each of the buns or loaves, add sauce, then cheese on top, dividing ingredients evenly. (Don't use too much sauce or sandwiches will be soggy.) Wrap each sandwich in foil and bake at 350 degrees until cheese melts.
    Why would I want my homemade meatball sub to taste like it is from Subway?
    unfortunately not. but pay 拢10000 and buy the franchise and they teach you how to make all the sandwiches on the menu.

    take a half pound of italian sausage, a half pound ground round (or whatever you prefer) mix it with an egg some itialian seasoning(basil, oregano and little parsley) add some pepper and garlic and a half cup of bread crumbs(I usually use the itialian flavored ones) and shape them into balls preheat your oven for 350 and cook for a half hour if your not sure if theyre done cut them in half


    the easy thing about this recipe is that you can quickly make your sauce while the meatballs are in the oven

    Sicilian Grilled Meatballs, or Polpettine alla Griglia: One usually thinks of meatballs going into a sauce of some kind, or being fried to golden perfection. However, Sicilians also grill them, and very fine eating it is, too.


    INGREDIENTS:


    2 1/4 pounds (1 k) boned veal or pork, ground.


    5 ounces (125 g) pecorino Siciliano (if possible the variety with pepper corns in it, if not a mild Romano), freshly gra


    1 cup bread crumbs, moistened in milk and then squeezed dry


    3 eggs


    2 tablespoons minced parsley


    1 clove garlic, minced


    Salt %26amp; pepper


    Organically grown lemon or orange leaves, lightly oiled


    Wooden toothpicks


    PREPARATION:


    Combine all the ingredients except the leaves in a bowl and mix well. Roll the meat mixture into balls a little smaller than a ping pong ball, flatten them slightly, wrap a leaf around each, and hold the leaf in place by sticking it with a toothpick.





    When you have finished making your meatballs, grill them to taste.

    3 (23-ounce) cans good-quality tomato sauce


    1 (5.5-ounce) cans tomato paste


    1 onion, finely chopped


    1 green pepper, finely chopped


    1 clove garlic, minced


    2 tablespoons Italian seasoning


    1/2 teaspoon pepper


    1/2 teaspoon salt


    1/3 pound ground beef


    1/3 pound ground veal


    1/3 pound ground pork


    1 egg


    1/4 cup Italian-style bread crumbs


    1/4 cup fresh-grated Parmesan cheese





    Combine the tomato sauce, tomato paste, onion, pepper, garlic, Italian seasoning, pepper and salt in the slow cooker.





    In a large bowl, combine the beef, veal, pork, egg, bread crumbs and Parmesan; form into balls.





    Transfer the meatballs to the slow cooker.





    Cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours.

    My personal meatball and sauce recipe... These stay moist and freeze well. My favorite use for these is meatball subs, but they work well for any recipe requiring meatballs or with spaghetti! I add extra flavor to premade sauce in this recipe, but when I have the time I like to make my own sauce. I also prefer making my own bread crumbs for the meatballs as opposed to using store bought bread crumbs. Moistening the bread crumbs with the water prior to mixing with the rest of the meat mixture and using freshly grated onion are both good tips to really moist, flavorful meatballs.





    2 slices whole wheat bread, coarsely grated


    2 tablespoons water


    1 lb lean ground beef


    1/4 cup parmesan cheese


    1 egg white


    1/2 teaspoon dried oregano


    1-2 tablespoon fresh onions, grated


    1/2 teaspoon garlic powder


    1/2 teaspoon black pepper





    Sauce:


    13 ounces italian pasta sauce (1/2 of a large can)


    1 teaspoon black pepper


    1 pinch cayenne pepper


    1/4 teaspoon salt


    1/4 teaspoon thyme


    Meatballs: Combine bread crumbs and water to moisten. Add beef, cheese, egg white, oregano, onion, garlic powder, and pepper. Mix by hand until just completely combined, but do not overmix. Shape into 26 meatballs and place in foil lined, greased baking dish. Bake at 425 degrees for 12 minutes or until completely cooked through. Sauce: While meatballs are cooking, combine sauce, black pepper, cayenne, salt, and thyme in saucepan. Heat over medium-low heat. As soon as meatballs are done cooking turn oven onto broil. Pat off extra grease from outside of each meatball and place into saucepan with sauce. Stir and cover each meatball completely with sauce. Let simmer for 10 minutes.

    Do you use a jar of chili sauce or a jar of barbeque sause and grape jelly to make the recipe? I have heard of both but I don't know which one tastes better.Meatball and little smokies recipe help?
    Actually you can use whichever sauce you like best. The chili sauce with the grape jelly is one kind of sauce....the barbeque sauce is another....you can just buy your favorite...thin it some with tomato sauce if you want it to go further....like putting the meatballs in a crockpot to serve out of.





    I buy pre-cooked meatballs, add the sauce...warm up over the stove...then serve in a crockpot which keeps them warm on the table.....serve with some toothpicks. These are great for a buffet. One time I needed more barbeque sauce...had some jelly, etc...so did them all together.....and it worked fine.Meatball and little smokies recipe help?

    Actually I have heard it was originally red currant jelly or welches grape jelly and Frenches Prepared Mustard. Like a jare of the jelly and 1/4 to 1/2 cup of mustard. Definately not chili sauce.
    I've been using that recipe for the past 35 years, and the original was chili sauce and grape jelly, I just use equal amounts and let the meatballs simmer over a very low stovetop flame for a couple hours........and Brittany's right, they're the first things to go, appetizer wise.........Enjoy!!!

    INGREDIENTS:


    1 1/2 cups chili sauce


    1 cup grape jelly (can use currant jelly)


    1 to 3 teaspoons Dijon mustard


    1 pound lean ground beef

    1/2 teaspoon salt





    PREPARATION:


    Combine chili sauce, grape jelly, and mustard in Crock Pot and stir well. Cook, covered, on high while preparing meatballs to bake.

    Meatballs


    1 pound hamburger


    1/2 cup uncooked rice


    1/2 cup water


    1/3 cup chopped onion


    1 teaspoon salt


    1/2 teaspoon celery salt

    1/8 teaspoon pepper


    Sauce


    1 can (5 ounce) tomato sauce


    1 cup water


    2 teaspoon Worcestershire sauce





    In a mixing bowl combine the hamburger, rice, 1/2 cup water, onion,


    salt, celery salt, garlic powder, and pepper. Mix well. Shape into


    balls. Place meatballs in an ungreased baking dish. Mix together the


    tomato sauce, 1 cup water, and Worcestershire sauce. Pour over the


    meatballs. Cover and bake in a 400 degree F. oven for 45 minutes.


    Remove cover and continue baking for an additional 15 minutes.


    This meatball recipe will make 15-20 meatballs.

    1/4 cup chopped onion

    1 can 16 ounce whole cranberry sauce





    In a bowl combine hamburger, soup mix, crumbs, and egg. Mix well.


    Shape into balls and place in 9x13 inch baking dish. In a saucepan


    combine chili sauce, brown sugar, water, sauerkraut, and cranberry


    sauce. Mix well while cooking over a low heat until it begins to


    boil. Pour over the meatballs and cook at 325 degrees F. for two


    hours.

    1 tablespoon vegetable oil


    1/2 cup finely chopped red pepper


    3 green onions (finely chopped)


    2 garlic cloves (crushed)

    1 tablespoon soy sauce


    1/8 teaspoon cayenne


    1 large egg


    1 can (14 ounce) chicken broth

    julienne strips green onion and red pepper for garnish


    In a large deep skillet, heat oil over medium high heat. Add red

    longer. Transfer vegetable mixture to a medium size bowl and stir in


    hamburger, uncooked rice, soy sauce, cayenne, and egg until well

    Cocktail Meatballs with Grape Jelly





    12 oz. bottle (mild) chili or seafood sauce (Crosse %26amp; Blackwell is good)


    10 oz. grape, apple, or other jelly





    Meatballs:


    1 lb. ground beef


    1/2 cup plain bread crumbs


    1/3 cup chopped sweet type onions


    1/4 cup milk or Half %26amp; Half


    1 large fresh egg


    1 Tbsp. parsley


    1 tsp. table salt


    1/8 to 1/4 tsp. black pepper


    1/2 tsp. Worcestershire sauce


    1/4 cup oil, or, small amount of oil mixed with butter for browning





    In a large bowl, combine using a fork, the beef, milk and Worcestershire


    Sauce. Allow to sit a few minutes. Continue to combine with fork or gently


    with hands, add bread crumbs, beaten egg, onion, parsley, milk, salt and


    pepper. Gently form 1 inch meatballs. Don't press the mixture tightly


    together. Brown quickly on all sides over medium high to high heat.


    Make sauce by heating jelly and chili, or, seafood sauce (Crosse and


    Blackwell is good) together.


    Place browned meatballs in sauce mixture and simmer, uncovered for 30

    Tangy Cocktail Meatballs








    1 beaten egg


    1 can condensed French onion soup


    2 cups herb-seasoned stuffing mix


    1/2 teaspoon seasoned salt


    2 pounds ground beef


    1 cup ketchup


    1 {8 oz.} can tomato sauce


    1 cup water


    1/3 cup packed brown sugar


    1/4 cup Worcestershire sauce


    1/4 cup white vinegar





    In a large bowl, combine egg, soup, stuffing mix, and salt. Add ground


    beef; mix well. Shape into 1-inch meatballs. Place meatballs in a


    baking pan. Bake in 350 degree oven for 15-18 minutes or till done.


    Drain meatballs and transfer to crockpot. In a bowl, combine ketchup,


    tomato sauce, water, brown sugar, Worcestershire sauce, and vinegar.


    Pour over meatballs and stir gently to coat. Cover; cook on HIGH


    setting for 2-3 hours. Serve immediately or keep warm on low setting up


    to 2 hours. Serve with toothpicks.





    Barbecue Cocktail Meatballs

    1 envelope Lipton's dry onion soup mix


    1 egg


    1 slice bread, crumbled


    Milk to hold meatballs together


    Salt and pepper to taste





    Sauce:


    1 can cranberry sauce


    1 bottle chili sauce





    Mix together the meatball ingredients and form into the size


    meatballs desired. Brown lightly in a skillet and drain off the fat.





    Mix together the sauce ingredients in an electric skillet. Heat to


    boiling, add meatballs, and simmer for at least 20 minutes. Makes 8-


    10 servings.





    ORIENTAL MEATBALLS





    16 ozs. hamburger


    1 egg


    1 sm. onion, grated


    1 tsp. dry mustard


    Salt and pepper


    Pinch of Italian seasoning


    1/4 c. soy sauce


    1/2 c. tomato juice (or V8 juice)


    1 pkg. Sweet 'n Low





    Preparation :





    Mix first 6 ingredients and form small balls. Pour sauce ingredients


    into pan, add meatballs. Cover and simmer for 1/2 hour.





    Let cool in refrigerator. Skim off fat. Reheat.

    This is my husband's ';Swedish'; meatball recipe. Please don't let the ingredients scare you, everyone loves them until they ask for the recipe! And they are incredibly good.





    2 8oz. pkgs. cream cheese, softened and cut up in cubes


    1 16 oz. containter sour cream


    2 cans cream of mushroom soup


    About 3/4 soup can of milk (may need to adjust a bit up or down)


    1 little can green chiles (I use Ortega fire roasted chiles)





    Combine all this in a crockpot on high. Whisk occasionally until the cream cheese blobs have melted. Add a good 16 oz. of frozen meatballs (we like the Italian style from Safeway), stir well, and keep letting it cook for at least 2 more hours.

    1 bottle Heinz 57 steak sauce (small)


    1 can jelled cranberry sauce


    2 tablespoons brown sugar


    3 lbs sliced smoked sausage


    Brown sliced smoked sausage. Melt steak sauce, cranberry sauce and brown sugar in a saucepan over medium heat until smooth. Place meatballs in crock-pot, pour mixture over and place the crock-pot on low. Excellent!

    Basic Meatball Recipe





    1 1/2 lbs lean ground sirloin


    1 whole egg


    2/3 cup plain breadcrumbs, approx


    1/4 cup milk


    salt and pepper


    3-5 dashes Worcestershire sauce





    Mix the sirloin, egg, milk, salt/pepper,%26amp; the Worcestershire sauce.


    Add as much of the bread crumbs as you need (mixture should be slightly moist).


    Roll into desired sized balls.


    Preheat oven to 375 degrees.


    Place onto a cookie sheet or 13x9 baking dish.


    Bake meatballs for 15-23 minutes depending on size of meatballs.


    Drain onto paper towels if necessary.


    Add to any sauce that you want to pair the meatballs with, example: Spaghetti sauce, Sweet%26amp; Sour sauce.


    This is just a basic recipe, have a little fun and add italian spices or asian spices.


    Make the meatballs small for a cocktail appetizer or larger for Spaghetti%26amp; Meatballs.


    Some of you may disagree with using lean beef but I've tried this recipe with so many different types of ground beef and find the sirloin tastes much better and surprisingly does not dry out.

    BAKED meatballs





    1 regular package of low low fat hamburger


    1 regular package of italian sausage


    2 eggs


    1/2 - 1 cup grated parmasian cheese


    2 garlic cloves finely chopped


    1 small yellow onion finely chopped


    (optional - 1 smaller green pepper finely chopped)


    1/2 cup breadcrumbs


    2 cups day old french bread chopped into 1'; squares (use the crust too)


    ~ 1/2 cup ketchup


    couple shots of worchestershire sauce


    garlic salt, salt and pepper to taste - really you don't need much


    gloves


    2 cookie sheets








    Put the whipped eggs into a large bowl with the bread squares - let the bread get all mushy, break it up with your fingers





    Add all the other ingredients to this mix above and mix it up with your hands really really well...





    Form into 1 1/2'; balls and place on cookie sheet one inch apart and cook for about 20-30 minutes on 350...turn them over and cook another 20 minutes


    Repeat process until done. This is a healthier way to cook them over frying them in a pan and its (in my mind) much less messy.

    Mama Iuliucci's FAMOUS MEAT-A-BALLS (Italian Meatballs)





    2 lbs lean ground beef


    8-10 slices white bread, broken into small 1/2 inch pieces (or you can use rolls or any stale bread you have and want to use up)


    2 eggs, slightly beaten


    1/2 teaspoon garlic powder (or to taste)


    1 teaspoon italian seasoning (or to taste)


    2 teaspoons parsley flakes (or to taste)


    1/4-1/2 cup grated parmesan cheese (or Locatelli)


    1-2 teaspoon salt


    1/4-1/2 teaspoon black pepper


    olive oil or vegetable oil (for frying)


    Mix all ingredients gently in a large bowl until well combined.


    Roll meatballs 1 1/2- 1 3/4'; in diameter.


    Heat about 1/4'; of oil over medium heat in a large frying pan.


    Fry meatballs in oil, rolling frequently, until evenly browned and juices run clear.


    Drop meatballs in your favorite sauce and let simmer for awhile to flavor sauce or just serve with your favorite pasta and sauce.


    Tip: You can also bake or broil these if the frying part is too much of a hassle-- I use my broiler pan if I bake them, so the fat drips down and away from the meatballs.

    Because you are combining ground meet with other moist ingredients, and then are cooking the meatballs in sauce, they are very tender and moist even if you use such lean meats as ground turkey or ground sirloin. .











    Tomato Sauce:





    1 28oz. Can Chopped Tomatoes


    3 Tablespoons Olive Oil


    1/4 Cup Finely Chopped Onion


    3 Cloves Garlic, Peeled %26amp; Minced


    4 Tablespoons Finely Chopped Fresh Basil


    Salt %26amp; Pepper











    Meatballs:





    1 Pound Ground Meat Of Choice (Turkey, Beef, Pork, or Veal work well)


    3 Tablespoons Olive Oil


    3/4 Cup Finely Chopped Onions


    3/4 Cup Pine Nuts


    1 Cup Mushrooms, Finely Chopped (Button Or Baby Bella)


    3 Garlic Cloves, Peeled %26amp; Minced


    1/2 Cup Fresh Parsley, Finely Chopped


    2/3 Cup Fresh Breadcrumbs


    1 Cup Ricotta Cheese


    1 Large Egg


    1/4 Cup Grated Parmesan Cheese


    1 Tablespoon Lemon Zest








    Heat the oil in a large shallow saucepan, and add onions. Cook over medium heat until the onions are translucent. Add the garlic and cook for


    another minute. Add the tomatoes, basil, salt and pepper and bring to a boil. Reduce heat to a simmer while you prepare the meat.





    In a frying pan, heat the remaining olive oil. Add the onion, mushrooms, and pine nuts and cook until the pine nuts begin to turn brown. Add the garlic, stir well, and remove from heat. Combine the remaining ingredients with the onion mixture and mix until well blended.





    Form the meatballs into 12 separate balls, and brown in the frying pan used to cook the onion mixture until the meatballs are browned well, turning carefully as needed. Gently place the meatballs into the saucepan holding the sauce and cover. Continue to cook the meatballs in the simmering sauce for 25 minutes more. Remove the meatballs and serve hot with a little sauce, using the remaining sauce to top your choice of pasta.

    I use 1-2 pounds (dependin on how many people) of meatball mix (ground pork, veal, beef all in one)





    Italian breadcrumbs (flavored)





    Fresh parsley

    Grated Romano Cheese





    1 egg





    Just plop everything in one bowl and mix well with your hands or a spoon....flavor to your liking....then all I do is fry them in olive oil....they are yummy. If you are putting them in a pot of sauce, throw the cooking oil in the pot of sauce too so that it adds that extra meatball flavor...

    Onion


    Garlic


    Pepper


    Oregano


    4 cans tomato paste


    4 lg cans of crushed tomatoes


    1 lg can of tomato puree....





    brown garlic and onion in olive oil and cook the paste with that...then just add everything else and keep stiring throught the cooking time....
    I don't measure, but I'll try...





    Ground beef, depending on how many you want to feed.





    Egg, depending on how much ground beef you use. I used an egg for each pound or pound and a half, or you could use some egg and a little milk for moisture. The egg holds the meatball together.





    Italian flavored bread crumbs, about 1/4 cup for a lb. of meat, but you have to use trial and error, as I don't measure.





    Parmesan cheese, grated. Again, depends on how much meat you use. I used about the same amount of cheese as I do breadcrumbs, or almost as much.





    Black pepper





    Sweet basil





    Minced garlic, fresh or dried, but you could use a little garlic powder instead or in addition to, if you choose





    Minced fresh or dried onion





    Fresh or dried bell pepper





    Fresh or dried parsley





    Other seasonings to taste, if you have favorites.





    No salt yet, as you have the cheese which is salty, but after the mixture is done, fry one meatball to test your spices. You can add more spices before you fry the rest. Always test one before you fry them all. Once the spices are right, then fry the rest of them.





    Mix everything together. Toss gently, don't mix too vigorously or you might make the meatballs tough. Then add a little olive oil and gently mix again.





    Gently make a few meatballs, and fry a couple to taste them, and adjust seasonings accordingly. You can always add more, so don't over-do the seasonings at first. You can't take seasonings out, you'd have to add more meat if you used too much seasoning.





    Also, if they are too dry, add a little milk, or one more egg.





    Once the seasoning is just right, fry the rest of your meatballs on low to medium heat so they'll cook all the way through. If you plan to put them in sauce, you can cook them most of the way, then finish cooking them in the sauce on low to medium heat.

    While meatballs are baking, combine 1 bottle of chili sauce and grape jelly in a saucepan and heat until jelly has melted.





    When meatballs are done, remove from oven. Drain and transfer meatballs to saucepan and coat well with sauce before serving.

    WITH MEATBALLS AND SAUSAGE





    2 lbs. lean ground beef


    1 c. Italian bread crumbs


    1 can beef gravy


    1 egg, slightly beaten


    1/2 c. Italian cheese (Parmesan/Romano)





    SAUCE:





    2 cans peeled tomatoes


    1 can beef gravy


    2 cans tomato paste


    1/2 c. honey


    2 onions, sliced


    1 green pepper


    6 oz. fresh mushrooms


    1 clove garlic


    1 lb. Italian sausage, parboiled and cut up





    Sauce: Mix everything together and add bay leaves, garlic, oregano, and pepper. Simmer 4 hours on low.


    Meatballs: Mix all ingredients (can brown in broiler). Add to sauce.
    ITALIAN MEATBALL RECIPE





    1/2 lb ground beef


    1/2 lb ground veal, pork or turkey


    1/4 cup bread crumbs (commercial, or grate your own from stale Italian bread)


    1 egg


    1 T parsley, finely chopped


    1/2 clove garlic, minced (optional)


    pinch of oregano or thyme (optional)


    1/2 tsp paprika (optional)

    4 lb lean ground beef


    2 cup dry bread crumbs


    1 tbsp salt


    1/4 tsp pepper


    4 large eggs, slightly beaten


    1/2 cup onion, finely chopped


    2 tbsp cornstarch


    2 tsp worcestershire sauce











    Recipe Preparation


    Preheat oven to 400 degrees F. (205 degrees C.). Combine all


    ingredients in a large bowl. Shape mixture into 1-inch meatballs.


    Place meatballs on ungreased baking sheets and bake 10 to 15 minutes


    until browned. Remove immediately and drain on paper towels. When cooled put about 30 meatballs each into five 1-quart containers leaving 1/2-inch space at top. Seal and label containers.





    Freeze.


    Use within 3 months. Makes about 144 meatballs.

    Ingredients


    鈥?/2 cup refrigerated or frozen egg product, thawed


    鈥?/2 cup fine dry bread crumbs


    鈥?/2 cup finely chopped onion


    鈥?/4 cup milk


    鈥?/2 teaspoon salt


    鈥?/2 teaspoon black pepper


    鈥? pound bulk pork sausage


    鈥? pound ground beef


    鈥?/4 cup apple jelly


    鈥?/3 cup spicy brown mustard


    鈥?/3 cup whiskey or apple juice


    鈥?-1/2 teaspoon Worcestershire sauce


    鈥ew dashes bottled hot pepper sauce





    Directions


    1. In a large bowl combine egg product, bread crumbs, onion, milk, salt, and pepper. Add sausage and beef; mix well. Shape into 48 meatballs. Place meatballs in a shallow baking pan. Bake, uncovered, in a 375 degree F oven about 30 minutes or until done (160 degree F). Remove from oven; drain.


    2. Meanwhile, in a large saucepan stir together jelly, mustard, whiskey, Worcestershire sauce, and bottled hot pepper sauce. Heat and stir until jelly melts and mixture bubbles. Add meatballs, stirring gently to coat. Cook for 3 to 5 minutes or until sauce thickens slightly and meatballs are coated. Makes 24 servings (48 meatballs).


    To Tote: Transfer meatballs and sauce to a serving dish; cover tightly. Transport in an insulated carrier.





    -----------Cocktail meatballs





    2 lbs ground chuck


    2 TBLS worchestire sauce


    2 eggs well beaten


    3 TBLS dried minced onion


    1/2 c ketchup


    1 cup cornflake crumbs


    1 tsp pepper


    1 tsp salt





    Mix all ingredients very good (I use my hand to mix....you can use plastic glove). Shape into small balls and place on baking sheet. A broiler pan is perfect so juices can drain. Cook in 350 degree oven for 15 minutes. Place cooked meatballs in 9 x 13 dish. In a saucepan....Use 2 12 oz jars chili sauce and 18 oz grape jelly....Heat over med high heat, stirring until all signs of jelly melts. Pour over meatballs.....serve room temp or heat in oven on warm until ready to serve. Meatballs can be made ahead of time and frozen.....then you just have to make sauce and pour over and heat in oven





    -----------------Baked Meatballs:





    Make these ahead, then freeze them for superfast meatballs anytime. They're also great as appetizers and in sandwiches.





    1 1/2 pounds ground beef


    1 large egg, lightly beaten


    3/4 cup quick-cooking oats, uncooked


    3/4 cup milk


    1 teaspoon salt


    1 teaspoon Italian seasoning


    1/4 teaspoon pepper


    3 tablespoons all-purpose flour

    1/2 teaspoon salt





    Combine first 7 ingredients; shape into 1-inch balls.





    Combine all-purpose flour, paprika, and salt. Gently roll meatballs in flour mixture, and place on a lightly greased rack in a foil-lined 13- x 9-inch pan.





    Bake at 400掳 for 25 to 30 minutes. Drain on paper towels. Serve with your favorite sauce.





    NOTE: To freeze, cool completely, and seal in an airtight container. To serve, place in a single layer on a baking sheet; bake at 400掳 for 10 to 15 minutes.

    Preheat oven to 325潞F. Combine first ten ingredients in blender. Puree. Place meat in large bowl. Mix the beef and pork together by hand. Add the puree to meat mixture and combine. Using a medium-sized ice cream scoop, scoop out meatballs. Form each ball by rolling in palm of hand until tight and solid. (balls should smaller than tennis ball, larger than golf ball) Toss lightly in flour to coat. Brown in olive oil. When meatballs are browned, remove from stovetop. Place in oven and bake for 30 minutes. Add to your favorite sauce.

    1/2 lb ground beef, 1/2 lb ground veal and a 1/2 lb ground pork. Add 1C of bread crumbs, two eggs and minced garlic and minced onions. I like to add some italian seasoning too. Mix all together and form balls. I just toss mine into my pot of pasta sauce and let simmer for about 2 hours. Dont stir the meatballs for awhile or they will break. The meatballs add great flavor to the sauce. Mangia!!!

    one cup of bread crumbs for every pound of meat, one egg also, you can mix ground pork and ground turkey in the mix also to get a little more mileage. shape into balls of course, brown in olive oil, and finish the cooking in the sauce, at least an hour. Enjoy, also don't forget to add a dash of olive oil to the water when you cook your pasta it adds flavor and helps to stop it from sticking, get a decent loaf of french bread also, very filing and satisfying meal. If you are old enough a bottle of Chianti Rustico will leave your guests thinking they died and went to heaven.

    1 LB ground beef or ground meat of your choice


    陆 cup unseasoned dry bread crumbs


    陆 cup Romano or Parmesan cheese, finely grated


    录 cup whole milk


    录 cup low-sodium beef broth


    录 cup chopped fresh parsley


    1 egg, beaten


    1 teaspoon dried oregano


    2 teaspoons garlic, minced


    2 teaspoons kosher salt

    1 teaspoon dried basil

    Yield: about 16 golf-ball sized meatballs

    Line a large shallow baking pan with foil; oil lightly. Combine all ingredients, using just enough water to moisten. Shape into meatballs, about 1 1/2 to 2 inches in diameter.

    1 egg


    2 (10.75 ounce) cans condensed tomato soup


    1/4 cup instant rice


    1/4 cup chopped onion


    1 tablespoon chopped fresh parsley


    1 teaspoon onion salt


    1/4 teaspoon ground black pepper


    1 pound lean ground beef


    1/4 cup Worcestershire sauce





    DIRECTIONS


    Lightly beat egg with a fork, then add a heaping tablespoon of the soup and mix lightly. Mix in rice, onion, parsley, onion salt and pepper. Stir in the ground beef and mix well with hands. From mixture into 1 1/2 inch round meatballs.


    Coat a large skillet over medium heat with cooking spray. Cook meatballs and brown on all sides.


    Combine remaining soup with Worcestershire (you can increase or decrease Worcestershire to your liking), stir until smooth, then spoon over meatballs. Cover with lid and simmer for 20 to 30 minutes, stirring every few minutes.

    Meatballs:


    4 eggs


    2 cups dry bread crumbs

    In a large bowl, beat eggs. Add the next five ingredients. Add beef; mix well. Shape into 1-in balls, about 12 dozen.

    Freezer meatballs taste horrible. Can you find time to buy 2 lb. gr. beef and a ';Meat Loaf'; seasoning packet (in the spices aisle). Follw the directions but instead of meat loaf, make meat balls. saves time in doing a meatball recipe. Have fun!

    Mine is using three kinds of meat..I never have left overs and even people who don't usually like meatballs love mine.


    INGREDIENTS


    1 pound ground beef


    1/2 pound ground sausage(we use Owens or Jimmy Deans)


    1/2 pound ground pork


    2 cloves garlic, minced


    2 eggs


    1 cup freshly grated Romano cheese


    1 1/2 tablespoons chopped Italian flat leaf parsley


    salt and ground black pepper to taste


    2 cups stale Italian bread, crumbled or boxed kind


    1 1/2 cups lukewarm water


    1 cup olive oil








    DIRECTIONS


    Combine beef, sausage, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.


    Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold it's shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.


    Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)


    Place cooked meatballs into Marinara Sauce and cook for 15 more minutes.

    Simply mix together 2lbs ground meat [minced]


    2 eggs


    1/2 cup bread crumbs

    1/3 cup of grated italian cheese like romano [add more to make them fantastic]


    1/4 cup of water


    tsp each salt, pepper and dried parsley


    mix together well with hands. i fry the meat balls slowly in olive oil in a heavy skillet, or, add to tomato sauce and let them cook slowly. don't stir the sauce until the meatballs float or they will break apart.Can someone tell me what the secret is to their own perfect meatball recipe?
    Adding onion powder is the first step. Second is adding a tiny bits of diced sweet red pepper. that gives it a little kick. And the most important thing is to make them very small. A bit larger than a quarter. This gives them a nicer flavor and keeps the meat moist not bulky.

    The meat mixture is the main ingredient , I use veal , pork, beef mixture , the rest is my secret.
    I crush some fennel seed and add to the mixture, and I wet the breadcrumbs with milk before mixing.

    EASY MOIST MEATBALLS





    1 lb. ground beef


    5 slices white bread


    Garlic salt


    Onion salt





    Place beef in bowl. Saturate each slice of bread. Squeeze slightly and drop in bowl. Add garlic and onion salt. Amount personal preference. (I use approximately 1/4 teaspoon of each.) Mix thoroughly, roll into balls and simmer for approximately 30 minutes in spaghetti sauce or gravy.

    1 lb. ground beef


    1 egg


    1/4 cup coarse bread crumbs


    1/2 t. salt


    1/4 t. pepper


    1 cup catsup


    1 cup water


    1/2 cup gingersnap crumbs


    1/4 cup brown sugar. firmly packed


    1/2 t. salt


    1 8-oz can sauerkraut





    Mix together meat, egg, bread crumbs, salt and pepper. Shape into 1 inch balls. Simmer catsup, water, and cookie crumbs for 5 minutes. Add brown sugar, salt and sauerkraut. Heat to boiling; add meatballs. Lower heat and simmer for 45 minutes. Serve 4 to 6.

    1 pound combined beef, veal, pork (must be fresh)


    3 large eggs


    1 cup grated Romano Locatelli Cheese


    1 cup bread crumb


    1 clove garlic - minced


    1 tablespoon salt





    Preparation





    (All mixing is done be hand)


    In a large bowl mix beef/veal/pork with eggs. Then add bread crumb, cheese, and salt. Finally add minced garlic in stages. Add a little then mix. Add some more, then mix. This way all the garlic does not end up in one meatball. Now, it's time to roll up the balls. Average size is roughly 2 inches in diameter. I usually get around 18 to 20 meatballs per pound.





    IMPORTANT! Do not cook meatballs in your pasta sauce! Meatballs cooked in sauce loose their flavor. The real key to a tasty meatball is cooking the them in an oven. So, heat oven to 375. Place meatballs on a rack - then on a cookie tray.





    Bake for 12 minutes on one side then 10 minutes for the other.
    I am at this moment eating them. Turkey mince or ground Turkey, a stock cube, onion and basil or your favourite herb.


    I have had mine with a tomatoey paprika sauce.
    Use 2 parts ground beef and 1 part ground pork and add one egg, salt %26amp; pepper and bread crumbs. Form into balls and fry them up to brown them then bake them until cooked.

    Chipotle chiles are jalape帽o peppers that have been smoked and dried. They are often served in an adobo sauce made with chiles, garlic, vinegar, onions and tomatoes. We came across this recipe for Chipotle Meatballs recently in the New York Times (a corrected version of the recipe) and it sounded so good we gave it a whirl. The verdict? Excellent!     3 slices bacon in 1-inch pieces


    3 garlic cloves, peeled


    2 large eggs


    1/2 cup bread crumbs


    Salt


    1 录 pounds ground pork


    1/2 cup (loosely packed) coarsely chopped mint leaves, more for garnish


    1 28-ounce can diced tomatoes (preferably fire-roasted), drained of all but 录 cup juice


    1 or 2 canned chipotle chilies in adobo, stemmed, seeded and sauce reserved


    1 teaspoon dried oregano


    About 1陆 cups beef or chicken broth.


    1 Heat oven to 450 degrees. In a food processor, combine bacon and 1 garlic clove. Process until finely chopped. Add eggs, bread crumbs and 1 teaspoon salt. Pulse several times to combine thoroughly, then add pork and mint. Pulse a few more times until well combined but not a paste. Remove meat from processor.





    2 With wet hands, form meat into about 16 plum-size balls and space them out in a 13-by-9-inch baking dish. Bake until lightly browned, about 15 minutes.





    3 While meatballs bake, combine tomatoes, 录 cup tomato juice, chipotles, 1 to 2 tablespoons chipotle sauce, oregano, remaining garlic cloves (cut in half) and 陆 teaspoon salt in a blender or food processor. Process to a smooth pur茅e.





    4 When meatballs are ready, spoon off rendered fat from baking dish, then pour tomato mixture on top, covering meatballs evenly. Bake until sauce has thickened somewhat, 15 to 20 minutes.





    5 Heat broth in a small saucepan. Divide meatballs among four dinner plates, leaving sauce behind. Stir enough broth into sauce to give it a spoonable consistency. Taste and season with salt, if necessary. Spoon sauce over meatballs, decorate with extra mint leaves, if you wish, and serve.





    Serves four.
    GREEK MEAT BALLS





    1 1/2 lbs. ground beef


    1/3 cup uncooked rice


    1/2 cup canned tomatoes


    1 large onion, finely chopped


    3 tablespoons fresh parsley, minced


    salt and pepper


    2 eggs, beaten


    6 cups bouillon





    Combine all ingredients except bouillon, kneading after eggs are added. Roll lightly into 1 to 1 1/2 inch balls. Bring bouillon to a boil and drop in meatballs. Reduce heat to a simmer, then cover and cook for 20-30 minutes. Meatballs are cooked when they rise to the surface.





    Sauce:





    2 eggs, beaten


    juice of one lemon





    To make egg and lemon sauce, beat eggs well, stir in lemon juice and 1 tablespoon of broth (in which the meatballs were cooked).





    Makes an unusual hors d'oeuvre.





    Variation: Supply toothpicks and serve without the sauce.
